Korg opsix
The Final Verdict At £569, the opsix is certainly not an outrageously priced synth, especially when you consider it has 32-note polyphony. Its nearest competitor is the Elektron Digitone Keys, which at £749 and only eight-voice polyphony seems like less bang for the buck. In evaluation, the opsix might be FM but it is definitely not a DX7, nor is it just a big Volca FM

I have never had this much fun playing with, messing with, creating my own patches as I have with the Opsix. Seems like every time I mess around with it I make something cool or interesting. I love the layout and it just seems much more intuitive than any other synth I have owned. I know it isn’t a perfect synth and people have some issues with it, but for me, this was one of the best purchases I have ever made.

A Yamaha DX7 OR MODX ?
Honestly, skip the dx7. It's a historical relic and while very cool, you can get the fm sound for free via a vst like Dexed, or you can look at some of the other available fm options. The dx7 isn't fun to program and the midi is more limited than the more rare dx7mk2. If you haven't already, I recommend taking a look at the korg Opsix, which is a wonderful 6 operator fm synth that's modernized and enhanced in more ways than just UI.

Returned it. No user temperaments on a FM is wacky. Terrible keyboard. Great core sounds but I can't use them.

Opinions on DX7
Getting an SY77 makes more sense. I dont like the korg OpSix other people mentioned. ADSR envelopes are very limited and essentially rule out its use for e-piano.

Do new synths have good "keyboard" sounds?
Korg Opsix (to name one) has some presets that are interesting to jam on as an actual keyboardist. Your observation about patch names is a good one. Naming patches for commercial use is really hard. You need to provide a patch name that is a sort of hint about how this voice could be used in a track, but without limiting its use.

Looking for a good polysynth under $1,000
I have an opsix and love it. Programming FM takes a little getting used to but the opsix has a very intuitive setup. Really great sound design possibilities and 32 voice polyphony.
