If you are not live streaming the recording I would recommend looking into a Zoom H6 with the EXH-6 capsule or a Zoom H8. Then your remaining budget can go towards dynamic microphones, stands, XLR cords, and pop filters. The Zoom H8 is currently on sale at Sweetwater for $330. You can budget around $25 each for 6 Behringer XM8500 microphones and the rest for a set of studio monitoring headphones, stands and XLR cards.

Standalone recorder (in stead of audio interface): zoom podtrak P4, zoom H6, rodecaster pro. Or this subs all time favorite "budget" recommendation, a couple of shure SM7b mics with a cloudlifter each plugged into any old interface as long as a macbook pro is involved. Seriously though, most xlr cardiod dynamic mics will work fine. No lavs, because they give a lot of crosstalk/bleed.
