1.4116 (german stainless) steel, larger scallop-y profile. I treated myself to a nicer Tojiro ITK bread knife but it's off being re-handled by my buddy (who keeps having life get in the way of my handles, goddamnit). That or something like the MAC bread knife is as far down that rabbithole as I'd go. Beyond that, you mentioned Fujiwara gyuto.

I rarely fully endorse a product. But it is my mission to recommend the tojiro bread knife around 20ish dollars.

It is flexible but it has never offended me because I love the laser thinness.

Great blade, bad handle. The blade is very similar to the Mac pro that I bought for my parents. The handle is a squarish, unweldy chunk of pakkawood. Unlike the Mac (handle too small), this is way too big. At the price, this is a great breafknife to buy and replace the handle.

Most culinary pros consider bread knives to be basically disposable; they say buy a cheap one & replace as needed. But I like using nice tools, this is nice & cuts very good. Time will tell regarding longevity, but I'm happy w/my purchase.
