 De Buyer has a good reputation for the quality of cookware and the Mineral B line came highly recommended by members of an online foodie website, so I decided to give De Buyer a try. The rim of the pan is 3 mm, measuring from the outside rim edge to the inside edge of the rim. I did not use calipers to measure, just a standard plastic ruler marked in mm and cm. ( Yes, some people will use calipers to measure the depth of cookware

 I am going to make heavy use of the pan in the next two weeks to see if actually starts living up to its reputation. I have spent 35 years cooking with Farberware, so maybe I am not just used to this type of pan yet.

Not Sure What To Think Of This Pan (Yet) : Overhyped or Worth It?

I am not a trained chef but do enjoy cooking. The bottom of this pan is not flat which causes all the cooking fat/oil to run to the edges away from the food. Maybe that is by design and preferred by some folks but it is a flaw IMHO.

 It slid right out of the pan onto my bowl of grits, [, Music ] and later the second evening i decided to cook a nice big, thick juicy hamburger, so that would be cooking red meat in the pan. For the third time, i also got some more potatoes going in my maffer, and i kind of like seeing the pans flying in formation and working together again and note. This is an electric flat top stove, it's the one. We have, in our downstairs note that the pans are both working very well on the smooth top electric stove in map

 What they say to do is scrub the pan with very hot water, get all that protective beeswax off. There then put a millimeter of oil in the pan and bring it up to a smoking point. Turn the burner off, wipe it out and you're ready to go. That'S your initial seasoning all right

 What you don't want to do when you swirl the oil around, is swirl it out onto your finger. I accidentally did that one time and brought my finger up to its smoking point: hey, that's not funny! So now you can see the pan beginning to smoke once it starts smoking really! Well, you dump that oil out and you take some paper towels and wipe and wipe and wipe and wipe and let it smoke just a little bit more and now we've got an initial seasoning on the pan. I think we're ready to do a little bit of cooking, we'll start with an omelette [ Music ]. I don't see any sticking so far matter of fact i can rotate the omelet

Yes, it's heavy, but not as heavy as a cast iron pan of the same size, and the very thick steel in De Buyer pans means that they won't warp, which almost all my Teflon pans have done, bulging a bit in the middle (I have a gas stove). The Eiffel tower handle is a very nice touch. It doesn't get get hot and provides a good grip - and looks much better than the traditional handles on De Buyer pans

The best thing with carbon steel is that you can redo the seasoning if ever needed, while damages to the surface of a Teflon or other non stick pan can't be repaired. A wonderful frying pan! Having tired of the common Teflon coated pans which are soo sensitive, I decided to try this instead. ..so if you pan fry something then toss it in the oven to finish cooking the handle will 'melt'.

but when I took the pan out after the oven at about a few hrs later but still at 250, the pot holder 'stuck' to the handle...there is some thick brown silicon coating on the handle, which on the stove top helps keep the handle temp down, but in the oven it melts and a dish towel, pot holder, rag etc will stick to it

I would recommend another brand that has NOTHING on the handle to avoid hot temp and having your dish towels still like glue to the handle when you go to retrieve it

This pan is sturdy and delivers as described. I purchased it as a gift for my college-age daughter who is in an apartment and she uses it mostly for fried eggs. She loves the no-stick quality and durability of the pan (no issues with seasoning it---follow the enclosed instructions) and plans to take it right through life with her. The handle is lovely

We loved this pan’s solid construction and slick nonstick surface. Scrambled eggs slid out of the pan without hesitation, steaks flipped easily, and the pan performed effortlessly as we moved it from the stovetop to the oven when making shepherd's pie. The actual cooking surface is only about 7 inches wide, so we had to be extra-careful when sautéing a skillet full of vegetables for shepherd’s pie; some pieces flew over the sides as we stirred. However, our scaled-down recipes for two people fit well in this pan, and we loved its long, sturdy handle.

 Anyway, with the 8 5/8", I used avocado oil about six times to try to pass the egg test, without success. On the 7th try, I had to take a phone call and forgot it was on the burner..

 Why the company ships pans that require brass wire brushes and a sink full of boiling water is a mystery to me. Since De Buyer also does that, and presumably Monfiel also, it must be how carbon steel pans have to be protected for international shipping. 14 1/8" too big for most burners...  plus the shipping wax/oil coating is insane to get off!

 There is a small scratch on the surface but its steel and will buff out after seasoning, not an issue. The edges are sharp and can cut you if not careful, I recommend going-over it lightly with some fine-grade sandpaper to buff out the burrs and remove that hazard. The handle is long and seems comfortable, it has nothing but a wax-coating and can safely be used in the oven.  It appears to be good quality, I have no complaints so far, just that its too big for my needs

 Again, I'm returning it and haven't used it as it appears too large for my needs (1-2 people, occasionally 3-4) however if you do regularly cook for lots of people, this may be the pan for you.  #Update #1 I got the 10 1/4 in size, posted a picture next to the 11 7/8 for comparison.  Its heavy, just not as heavy as cast iron. I dont flip foods in it like I do my non-stick and my All Clad because they are light. I dont make gravies, or tomato sauces, chili, stews or roasts in my carbon steel. I could, but I go for cast iron or stainless as the better match, but out of 50 meals or dishes, based on how and what I cook, 30 of them would be in carbon steel, 10 in stainless, 8 cast iron, 2 in nonstick

  SUMMARY - This is my go to pan because it matches me. I never put it up as it always on my stove. Its heavy, just not as heavy as cast iron. I dont flip foods in it like I do my non-stick and my All Clad because they are light

 Cast iron is practically indestructible on the stove or on a fire.  VERSATILITY - 3 stars - I use this pan the most because its meets my cooking trends and personality, however I believes its the least versatile or tied for last with the non-stick. I find my ALL Clad stainless the most versatile and if I could have only one pan, a 12 in All Clad stainless even though I use mine less than this carbon steel pan.  VALUE - 4 stars - a really good pan at a logical and decent price

My go to pan....but not the most versatile

 I decided to do the ever so popular egg test with a typical amount I would use on my 18/10 pan. Let first say I gradually brought temperature up in a 5 minute range. Got it to about 5 on stove and the butter was bubbling ready for the egg. I had a good initial sizzle and I have to say the egg was slipping all over very easily

 I have seen this method done and it gives it great results. The biggest problem I had with this pan is the cleaning. Be prepared to clean this pan vigorously before seasoning. The seasoning will not adhere properly if the wax coating is not removed from factory

 I'm a lightweight adult male and can comfortably pick it up one-handed and toss food in it. (I would not do the same with the Lodge.) It's too heavy for my (much smaller) wife to do the same.  Between my 8" de Buyer and 10" Matfer Bourgeat carbon steel pans, I prefer the Matfer Bourget

  I've never gotten Teflon-like non-stick performance, but it's better than stainless and plenty good for everyday cooking with eggs and fish.  I use this pan most of the time, but there are niche use cases when I reach for something else: - A nonstick pan (didn't list it above because it's a sauté pan) for delicate foods that I *really* don't want to stick - Stainless steel for cooking acidic stuff like tomato sauces (they can mess with the pan's seasoning if they sit in it too long) - Clad stainless when extra-even heat retention is needed (though I've not had trouble with this in practice)  For reference, I've used this pan for just over 3 years.

This pan is a great all-arounder that I usually reach for when I need a medium pan. I personally enjoy cooking with it more than my similar stainless and cast iron pans.  More details:  - Handle's shape works well for tossing - Handle length helps it dissipate heat so it's more comfortable to grip while in use - The whole pan, handle included, is oven-safe - Handle is welded to the pan so there are no rivets. This is awesome because it makes the pan easier to clean - Angled sides are great for tossing (small stir fry, flipping eggs, etc

) - Moderately nonstick once it's seasoned (but initial seasoning is trickier than cast iron) - It ships with a protective coating that takes a frustrating amount of elbow grease to remove - After years of use, it's developed a barely-perceptible warp on high heat that doesn't seem to affect cooking on an electric range  I have frying pans from Lodge, de Buyer (Mineral B) Cuisinart (Multi-Clad Pro), and All-Clad (D3) that I can compare this to.  Shape-wise it's similar to my All-Clad and de Buyer pans; its sides have a lower angle (~45°) than the more vertical Lodge or Cuisinart sides. I think the lower angle is more generally useful because it works well for tossing and also makes it easier to slip spoons or spatulas under whatever's cooking.  It's heavier than stainless pans (1724g vs my 10" Cuisinart's 1081g) but lighter than cast iron (my 10" Lodge is 2483g)

My go-to medium frying pan

 One thing I have learned is to avoid high temps, I try to keep the surface between 300° and 325° when browning, any higher, and food seems to stick, esp. high moisture foods.

The aluminum hard anodized are great, until they wear, and they do wear, even though I only use plastic utensils, and a non-stick safe scotch brite pad to clean them

  Again, beautiful pan and will be a real workhorse; I'll just adjust my expectations.

 I threw everything at it I could, followed directions to the T by everyone I read; I could get it to look beautifully black, but I’ve given up the thought of ever being able to use it to make a french, much less any other kind of omelet (I’ve resorted to a new non-stick pan reserved for that). After every use, I need to scour the pan from stuck food particles and have just surrendered to using the pan to cook in, clean and re-season over and over and forget the holy grail for now. Maybe after a year of just using the thing it'll develop it's own patina and seasoning as did the cast iron. Gotta say it's satisfying to use Bartender's Help on the stainless steel Allclads when the need arises and get them back to a clean shiny smooth surface
