The most expensive part of this kit broke very easily and splintered into a brick of cheese I was cutting. If you are a sushi chef, then these knifes may be beyond great for you, but if you intend on cutting thick meat, cheese, or anything else with the larger blade of the set that is considered somewhat difficult to cut, or thick, do not expect the knife to last long and be extremely cognizant of small peace’s of the ceramic knife breaking in your food. A very, Very real concern and warning of caution. The big knife is way to thin and could shatter into your food

 It almost happened to me but I caught it. I have cheaper ceramic knives that are tougher, more rugged, and Cheaper (but much THICKER than these knifes which leads to the forever life span ceramics advertise). No body wants to find a razor blade in their apple, and I am only being brutally honest because the larger thin blade could give you that result if you are not always very cognizant of the condition of your blade. I love these knives. I own 10 of them. They are very sharp, dishwasher safe and can handle some tasks that I wouldn't dream of putting my Shuns though. The issue that I have is the false advertising that Kyocera provides concerning free sharpening

With me having so many knives it's going to be over $100 to ship and have them sharpened

Knife sharpening is not free

They are very sharp and you will use them frequently. But they are not meant for cutting thick or heavy foods, especially the larger knife, whose blade literally disintegrated on me attempting to cut a block of cheese of all things, leaving the knife unsafe to use further. I contacted Kyocera and they basically told me "too bad -- we won't replace it". Expect these knives to last about a year under normal wear and tear

Bought this as it came recommended.  However, I don't thin ceramic knives are for me. Too delicate and I got all paranoid using it. eventually the chef's knife chipped

Not for me

I have seldom written a review for a product, but this knife set deserves an exception. After researching other reviews on these ceramic knives, I took the leap and ordered them. As the deal of the day, they were a bargain I couldn't resist and I figured I had little to lose. My motivation - I've gotten into juicing, and find myself cutting up large volumes of fruits and vegetables, including hard items such as carrots

 Occasionally, when I've grabbed my nearby standard knives to just do a small task, I realize how much better the Kyocera knives are (although I must admit I may just have to sharpen my metal knife set).  I have no idea how long they will last (I make sure to cut on a plastic board as recommended, and wash and dry them immediately after use) but so far I absolutely love them.

As warned, I cut myself the third time using it, but they're so sharp that makes cutting hard vegetables a snap - I can't even go back to my old knives anymore (they've been put to hibernate) Now, they do stain, especially after I cut carrots, the white blade turns a little orange despite prompt washing, but since they make my life so much easier, a little stain is really no big deal. The real problem is, because it's ceramic, it's very fragile. When I goofed and left the Santoku on the rack, it slid into the sink and you guess it, it chipped, right in the middle of the blade

So sharp but so fragile

 I understand that there are issues with installing handles on ceramic blades, but there must be a better material. You can feel the raised seam that runs down the center of the handles, they are a little slick when wet, and they otherwise look and feel low grade. I would gladly pay more for the same blades with upgraded handles.

 I do suspect that a fall onto a tile floor would not end well for the blades. Unfortunately, the molded plastic handles feel cheap and are not all that comfortable. I bought these knifes again, because my older one broke. But after my first one, now I know how to use them better. I will use them with softer foods, such as veggies and fruits. It doesn't discolor them like the metal knife does, so it's great

 I am a vegetarian and it's perfect for veggie lovers. It's still sharp after two years of use, except that I broke it trying to cut defrosted veggie. I won't make that mistake again. I have my metal knife in the kitchen for harder materials
