If you want to sound like EVH you ought to go with a guitar like he owned. I’d look at the Kramer Baretta and Charvel guitars. Both are killer instruments. You can’t go wrong with either

If you want an inexpensive guitar that's set up well from the factory, the Kramer Baretta Special is like $180. It's outstanding for the price and fairly straightforward. One pickup, one volume knob so not much to fuss with.

Man, both guitars are really good especially for the $$, but I really like the feel of the Kramer Baretta personally when it comes to having that perfect feel for old '80's rock/metal. I like the way the neck on the EVH feels generally, but that 14" radius on the Kramer is perfect for shredding, at least to my own taste/touch. I will say though that having two pickups in the EVH is a definite bonus for more versatility.

As far as amps, I highly suggest you buy a USB Audio Interface like a cheap Behringer UM22 uphoria so you can plugin your guitar on your computer. Then you can run virtual amps like Guitar Rig 5(free) which sound amazing especially when paired with Impulse Responses.
