Decathlon Triban are apparently great value entry level bikes, albeit hard to find.

I’m riding a Decathlon Triban RC120, super cheap, but I’m super happy with it. Microshift group set, not as smooth as the Shimano Sora my friend has, but it doesn’t stop me from enjoying my ride and going fast.

If you ask me, I don't believe you'll need to invest in a gravel bike for riding on walking paths, a normal road bike can do well on off road terrain as long as there is no loose terrain, that being said road bike tyres will have less grip so you won't be able to bomb off-road corners and wheelspin if you stand on the pedals when you start from a standstill. Emphasis on no loose terrain, dirt piles and gravel puddles for traversing those you'll need really large tyres, something like 40mm wide which is the maximum width you can fit on a Mongoose grit. Looking at the grit I'll assume your budget is under 500$ and so I'd recommend the used market or an all rounder road bike like triban rc120, I've heard the discs aren't great so I'd look for the rim brake 120, it can fit at least 32mm but I don't know the exact upper limit and it's got a nice stiff and light aluminium frame as well. Doesn't make sense to get the grit for something that a standard road bike can do.

Decathlon bikes are really good, i ride the triban rc120, and it never fails me, but i cant for my life think about not having gears, my commute has one big hill and i dont think how someone can do that every day without breaking their legs entirely.

Decathlon offers some nice bikes at that price. You could take a look at the triban rc120, or the rc120 disc. Imo they offer probably the best value for money on the lower end of budgets. Plus, if you live close to an outlet, you can always test ride the bikes before buying to make sure it is comfortable and you get the right size.
