I'm looking for something that is quality but isn't as delicate as some of the incredibly hard Japanese blacksmith knives (I want a Fujiwara knife so much, Lol). 

I am currently using a mercer chefs knife which is exactly okay, I can run it through a pull through and not feel bad about it. 

I am looking for a knife I can use at work and not worry too much about completely babying the knife. I'm looking for one that I can use for a good amount of prep and have on my station during service. 

I do have a shun premier santoku which is in serious need of sharpening (which I will do soon). I love the knife, but I find it works better for more delicate prep where I want to be a bit closer to the food or on a smaller station. 

Opinions on MAC for the professional kitchen

For that price, I'd recommend the MAC MTH-80. It's not a "beater" per se, but it's stainless and can take a lot more than a very hard, thin knife.

So idrk but this might be a weird recommend me post. 

I recently bought my first proper knife (Blenheim forge classic range gyuto) and I love the knife and pretty much everything about it. But for when I just want to cut a few tomatoes late at night etc. and can’t be bothered to get it out use, clean, dry and put away again I really want something that I can just leave for a bit and won’t rust so probably stainless steel. 

I also want something that is still going to be as satisfying to use and pretty as my Blenheim. 

I don’t really know if this is possible or not?

My price range is probably between £100 and £200. 

Like I say I’m really just looking for advice.

Beater knives

 I've altered my cutting procedure at times, in a "if you can't beat it, join it" spirit: Instead of cut, cut, cut, cut, cut, cut, gather cut pieces and place in bowl, I'll cut, swipe cut pieces sticking to knife into bowl, cut, swipe cut pieces sticking to knife into bowl, etc. etc. Another thing I should add - be careful when drying this knife. I now have a slew of kitchen towels with holes in them!]

  OK, that's my first impression. I'll come back and give updates as I have more experience. Can't wait to start cooking with this thing :-) !!!  BTW - I much prefer the chef's knife shape (rounded toward front) of this knife as opposed to a Santoku. I tried a Santoku but it doesn't lend itself to the rocking motion I'm used to

  First impression: This knife is BEAUTIFUL! No, really - I mean it's beautiful to LOOK at! If I didn't have to use it to cut, I'd frame this baby and hang it on my kitchen wall. And HOLY COW - how it cuts!!!!! The tomato turned to BUTTER under this knife. I've never experienced anything like it. I barely had to move the knife and it sliced through like there was nothing there

It just slid through carrots and leeks, and holy cow, I never dreamed a knife could cut through potatoes like that. It felt like going through butter. It is a great knife even for the professional. As a chef this is a good knife for smaller veg and herb work, I usually use it for fish mongery(the blade is pretty pliable)

Good knife

  The MAC's are not real fancy with silver inlays or high polish or anything but it cuts like a razor and stays that way better then any of my other knives. The fit and finish is good too.  The steel is very similar to the Globals and Shun's but I don't like the feel of the Globals handles and Shuns are more expensive. Also, the MAC came very sharp out of the box

 you would probably be better off with a heavy German Knife (Wusthof or Hencke). In that case you loose the razor like cutting you get out of one of the Japanese knives.

  I don't usually come back and rate something I bought but I did a lot of research and after using the knife through Thanksgiving I have become passionate about it and MAC knives in general and want to share them with everyone else. They are kind of a secret and fairly hard to come buy. Also MAC's are not sold in sets and you may not even be able to build a set from one style of MAC (like Classic, Professional, Superior, etc). You may have to mix styles

 Only when you own a GREAT knife do you come to understand how most knives are truly NOT. The 8-inch hollow edge chef's knife turns nearly every task into a "like a knife through butter" joke when we're in prep mode. In no way do I profess to be anything close to a professional grade home cook, and I say as much in my video review (if you can actually hear it), but I feel like one because slices are consistent and paper thin. Even an overripe and rock-hard lime! Chopping up tough veggies, filleting and breaking down a whole salmon to make sushi, trimming the fat from a roast with minimal waste — all are deftly done with so little effort it's almost laughable

I'm not a professional chef but I feel like one at home

  I spent hours researching information on Chef knife forums (yes they exist) before deciding on the Mac Pro. I knew I wanted a stainless steel Gyuto (Japanese chef knife) and this Mac Pro was the model most often recommended in that price range. The knife has excellent fit and finish but is not flashy like some Damascus steel knives. Its just what I wanted, a tool not a showpiece

 as far as weight and feel in the hand, the mac is better for my smaller hands. it didn't initially feel amazing to me, but it feels light and powerful and i think ill grow to love it over time. speaking purely in terms of money and value, if i had to do it all over again i would have probably just bought the spyderco sharpening set with ultra fine rods and maintained my victorinox. but as a food lover and rabid cook, i don't regret buying the mac as it is slightly sharper and will hold an edge much longer, it's just i feel slightly sour in that i expected to be blown away and was not

So this is the paper that was pushed underneath the clip alright, when I opened it, it says: notice heavy-duty spring steel clip

Super heavy and no practical usage

This knife is a prefect example of form over function. The blade is so thick it doesn't fit between a door and the frame to pry it open. It is built to survive the end of the world. Well, the owner doesn't stand a chance with it but the knife will survive any doom day disaster
