 To get color on food efficiently a pan needs to get some brown bits on it. The good news is this pan is easy to clean, all it needs is hot water and baking soda. You let it soak, then easily wipe it out. When you're cooking with this pan you need to use a generous amount of fat

 Get the pan hot, add the fat and then brown your meat or veggies. Wait till the food is easy to lift away, then turn whatever you're cooking. You cannot turn the food instantly like you do with a cheap pan, you have to wait until the food easily releases and is ready to be turned. Cheap pans cook extremely quickly because they don't have good heat distribution

If someone complains about this pan, after using it I realize it's literally user error. It's also people who don't understand what type of pan this is to begin with. This is not a non stick pan, its an enameled cast iron pan. It's meant to do something that nonstick pans are not really meant to do

Worth every penny

 These pans are, without question, the best frying pans I have ever used. I first encountered them in the care of a roommate who was gifted two of them upon graduating culinary school. The special enamel coating is unlike any pan I have ever used: it is not a traditional "non-stick", nor is it a plain cast iron. It is a unique enamel formulation that, over a short period of time, acquires a patina which offers the best of both worlds

  Unlike traditional cast iron, the Signature pans do not require seasoning with oil and high heat, and can be washed with regular dish soap and scrubber sponges or the like. You can put them in the dishwasher, and you can use heavy scrub brushes on them, but both of these things will inhibit (or outright prevent) the development of the patina that enables the enamel finish to really function as intended. I recommend only hand washing, and only using soft nylon scrubber sponges at most. Fortunately, even high heat cooking rarely if ever sticks anything to this pan so badly that you can't clean it off with a sponge or, at worst, getting at it with a wooden spoon

 The special enamel coating is unlike any pan I have ever used: it is not a traditional "non-stick", nor is it a plain cast iron. My pan hasn’t developed the patina that is mentioned but I tend to throw mine in the dishwasher after wiping it out which will slow that process.  5 - And being able to throw this in the dishwasher if you’re feeling extremely lazy is something you’ll never be able to do with regular cast iron

 The interior is sealed with enamel, you can’t season it like bare cast iron. Food won’t stick if you know how to use it.  3 - The pan needs to heat up before you put anything in it. If you’ve only ever cooked in nonstick cookware you can get away with starting with too cold of a skillet, cast iron requires the skillet to be hot

Don’t Blame the Skillet!

  I wasn’t trying to avoid teflon or chemicals or anything, I just wanted to buy some cookware that would last until I ended up in a retirement home. I’m not a Chef, YouTube star, or credentialed in any way to tell you what to do in your kitchen. I’m just a normal human being that needs to cook food when hungry.

 If you are having a really tough time cooking with this you can sort of season it by giving it a light wipe down with high smoke point oil and putting it in the oven upside down for 1hr/200F. Le Creuset support told me about this, but where adamant that it isn’t a required step.  I wasn’t trying to avoid teflon or chemicals or anything, I just wanted to buy some cookware that would last until I ended up in a retirement home. I’m not a Chef, YouTube star, or credentialed in any way to tell you what to do in your kitchen

Excellent cookware, if you KNOW what you are getting in to.

 Good news - if you use a few simple techniques others have suggested online, this skillet will cook eggs that slide easily across and out of the pan. It's ALMOST as silky as teflon, without the drawbacks.  1. After initially washing, I heated some oil in the pan for 10min or so then washed it out, just to get the patina started clean

 Let the eggs sit outside the fridge for 10 minutes or so to take the chill off 4. Once the pan's heated, throw in a small amount of butter or oil and let it come to temp and coat evenly 5. Add eggs  The big thing is heating slowly and using fat - not sure how much the other steps help, but they can't hurt. In any case the result was great - I scrambled the eggs right in the pan and had zero sticking

 2. Pre-heat the pan low and slow (5 min at the 2 setting on my basic gas stove) 3. Let the eggs sit outside the fridge for 10 minutes or so to take the chill off 4. Once the pan's heated, throw in a small amount of butter or oil and let it come to temp and coat evenly 5

Eggs don't stick.

 If you are conscious about the type of materials you use to cook and the impact that they have on your health, I highly recommend this one.

I was searching for a healthy, nonstick cooking option that was durable and high quality. I decided that my health was worth the price after much research. I bought this skillet along with another ceramic product and use this one the most. I can put it on my induction stove top, I can cook in the oven, I can make quick meals and avoid sticking

 I'll use a soft brush or sponge to clean it. I love it and just purchased another Le Creuset product to make soups and bake bread. If you are conscious about the type of materials you use to cook and the impact that they have on your health, I highly recommend this one.

Durable and Healthy

 I'm ticked off that Le Creuset doesn't stand behind their products. I'm ULTIMATELY ticked off that now this couple years later this stupid pan that doesn't serve it's only purpose is heavy and constantly in my way of my other useful pans..

  I'd like to add, that while I'm not a trained chef I cook breakfast, lunch and dinner for my family every day. My kitchen is filled with professional equipment, all of which does its job without qualms. I'm a whole clean food cooker that spends SIGNIFICANT time learning and improving. I would consider myself a fair bit above average in the kitchen

 I kindly explained to them the situation. I was shocked at the response.  Firstly, they advised me to only use canola oil (yes, GMO freaking walmart Canola Oil on my $170 freaking dollar pan lol). They said to go and buy "Bar Keepers Friend" to clean it with (which I did btw, and no it didn't fix it

I think it was a great investment and I just hope that with good care I can keep this pan performing and looking new for many years

We loved this pan’s solid construction and slick nonstick surface. Scrambled eggs slid out of the pan without hesitation, steaks flipped easily, and the pan performed effortlessly as we moved it from the stovetop to the oven when making shepherd's pie. The actual cooking surface is only about 7 inches wide, so we had to be extra-careful when sautéing a skillet full of vegetables for shepherd’s pie; some pieces flew over the sides as we stirred. However, our scaled-down recipes for two people fit well in this pan, and we loved its long, sturdy handle.

 Anyway, with the 8 5/8", I used avocado oil about six times to try to pass the egg test, without success. On the 7th try, I had to take a phone call and forgot it was on the burner..

 Why the company ships pans that require brass wire brushes and a sink full of boiling water is a mystery to me. Since De Buyer also does that, and presumably Monfiel also, it must be how carbon steel pans have to be protected for international shipping. 14 1/8" too big for most burners...  plus the shipping wax/oil coating is insane to get off!

 There is a small scratch on the surface but its steel and will buff out after seasoning, not an issue. The edges are sharp and can cut you if not careful, I recommend going-over it lightly with some fine-grade sandpaper to buff out the burrs and remove that hazard. The handle is long and seems comfortable, it has nothing but a wax-coating and can safely be used in the oven.  It appears to be good quality, I have no complaints so far, just that its too big for my needs

 Again, I'm returning it and haven't used it as it appears too large for my needs (1-2 people, occasionally 3-4) however if you do regularly cook for lots of people, this may be the pan for you.  #Update #1 I got the 10 1/4 in size, posted a picture next to the 11 7/8 for comparison. Appears to hold 2, maybe 3 eggs most. Weight is much more reasonable and balanced, seems like a great mid-size pan but may be slightly too small for my needs 😬, still better than the 11 7/8

 Its heavy, just not as heavy as cast iron. I dont flip foods in it like I do my non-stick and my All Clad because they are light. I dont make gravies, or tomato sauces, chili, stews or roasts in my carbon steel. I could, but I go for cast iron or stainless as the better match, but out of 50 meals or dishes, based on how and what I cook, 30 of them would be in carbon steel, 10 in stainless, 8 cast iron, 2 in nonstick

  SUMMARY - This is my go to pan because it matches me. I never put it up as it always on my stove. Its heavy, just not as heavy as cast iron. I dont flip foods in it like I do my non-stick and my All Clad because they are light

 Cast iron is practically indestructible on the stove or on a fire.  VERSATILITY - 3 stars - I use this pan the most because its meets my cooking trends and personality, however I believes its the least versatile or tied for last with the non-stick. I find my ALL Clad stainless the most versatile and if I could have only one pan, a 12 in All Clad stainless even though I use mine less than this carbon steel pan.  VALUE - 4 stars - a really good pan at a logical and decent price
