Ubiquiti Unifi AP AC PRO wireless access point, unboxed and reviewed - worth the money?

It is expensive. This unit cost me over 130 UK pounds which is quite a lot for just a wireless access point.

Moved in with inlaws for a few months and her ISP supplied router cannot keep up.

Buy a Ubiquiti AP. It’s just an antenna, so all you need to do is give it the same SSID as the current router, but it’ll give *much* better signal.

Turn off the ISP router’s antenna, and you’ll be in a much better place.

How does an old "premium" router like the Netgear Nighthawk R8000 compare to a newer $50 one? a 100 one?

I have an R8000 and it's plenty capable though I disabled the WiFi and have a couple of Ubiquiti AP's around the house for WiFi devices. If you plan on sticking with the stock firmware there are issues with DNS meaning pages often don't load first try.

Looking for some AP recommendations for use with PFSense

You seem to already have experience with VM's so, I'd recommend just running it in a VM. These AP's really shine when you decide to segment your network and start using VLANs and Ubiquiti makes it somewhat intuitive to setup the VLANs on the controller.
