All decent enough products. That said, you may want to consider *embedded* controller products instead, which integrate the controller into the AP firmware itself, avoiding the extra dependency while providing multi-master failover, all without any extra monkeying around -- stuff like Aruba Instant On, Cisco CBW or used Ruckus running Unleashed. All of those can support multi SSIDs, PoE and have at least Wifi 5 options, if not both.

Is Aruba Instant On the Unifi that stays in-stock?

Aruba Instant On has a good reputation on here, though I have never personally used it. I do hate the notion of mixing vendors when you have already established a platform on your small business clients. It can get messy in the long term. Ubiquiti Unifi stuff does hit the market in waves.
