One of the easier routes is using a Pi zero W (iteration one or two), and a retroflag GPi case. I recently saw their new GPi Case 2 for the Pi CM4 board as well, which looks interesting, but good luck finding one of the Pi boards at the moment. Start with an easy project. GPi case will do the trick nice and quick. For a more ambitious project, maybe get a broken GBA, backlight it and you are good to go!

I've got the RetroFlag GPI case and love it. It's great for GB, GBC, and GBA.

The unit had batteries installed already and the buttons didn’t work. Also the small cable connecting the pi to the motherboard is broken. I was sent a used handheld game. The build quality seems good tho. Was disappointed.
