The Boyue devices run Android which has pros and cons, more flexible but they do suck a little more battery (still eInk screen though). Pocketbook is more akin to a Kindle. Both will read ePubs and they each have a few size options. If you're looking for a 6" replacement for your paperwhite you may want to consider the Boyue Likebook P6 and the Pocketbook Touch Lux 5.

My considered diveces are the kindle Paperwhite 2021 and pocketbook touch lux 5. As my research shows, the library for the pocketbook is not great at all, but I like that it has a SD slot. The Kindle has a better book selection.

Does a super bare-bones ereader like this exist?

If you're willing to compromise on that "no internet access" then you can consider new devices like the Pocketbook Touch Lux 5 or Boyue Likebook P6 that have microSD card slot support, work over USB, can read DRM free books and PDFs and aren't much larger than an iPhone 8. Just turn off WiFi and you'd be good.
