I know it's not exactly $500 but I have been having a lot of fun learning photography with my Olympus OM-D E-M10 MKIV. It's $700 with the kit lens, very portable, user friendly and comfortable to hold!

Hands down a used Olympus OM-D E-M10 II and M.Zuiko ED 14-42mm kit lens for well under $400. Portable, lightweight, image stabilization, advanced features to grow into.

The 12-60mm kit lens that often comes with it is great though - also weather sealed (although I still wouldn't take it out it anything more than a light drizzle). For all of the above the kit lenses are pretty good, so you won't really need any more until you develop more specialist needs.

Considering you should leave some money for lenses, The Om-d E-m10 II's quite handsome and very cheap. I got mine for 200 dollars in a secondhand kamera store, to use as a travel camera though incredible hard to travel nowadays. Then spend the rest for the olympus 25mm f/1.8 and olympus 45mm f/1.8 lenses second hand.

I'd check out the Olympus OM-D E-M10 Mark IV. Compact package. Plenty of good, inexpensive MFT lenses, and the crop factor doubles the reach of your telephoto for wildlife.
