My husband broke the tip off of my favorite knife, a vintage 7” Sabatier doing stupid things with it.

 This is made in china. This includes the four basics: a santoku, an additional and serrated utility knife, a set of six for steak, a honing rod and a pair of shears compared to premier saboteurs, which is a traditional, slightly rustic look. This is an almost spartan overall feel with the gray contoured handles and the austere black block. These knives are also incredibly lightweight a plus point for home cooks, who aren't into heavy full, bolstered forged ones of all the ensembles listed here

 This 10 inch chef's knife can cost you a couple of bucks, but it'll be surely worth every penny since it's made with authentic carbon steel. That will surely last you for years to come. This piece of cutlery is made in the legitimate saboter factory in theirs, making it a truly remarkable knife that doesn't only have an attractive look, but has quality performance as well. What'S great about this knife is its overall design

 Second, the black plastic doesn't completely fit up against the metal at the bolster, so there's a thin ~1mm gap between the metal and the plastic where stuff could collect. Also, the spine of the blade (the part that doesn't cut) has a fairly sharp 90 angle on it that is a little uncomfortable to push against w my finger. It would've been nice for it to be rounded off. I guess I could fix this by going at it with some sandpaper, but not sure how to fill that thin seam between the plastic and the metal

I never let it sat soaking but I also didn’t baby it and it came at no cost - no issues with rust or anything.

The blade’s height and the narrow handle provide sufficient knuckle space for anyone who would be to use it. 

Spine is straight, no cracks or huge gaps in the handle, everything is even and looks nice. No complaints here.

Meats: I’ve used the knife for trimming fat and silverskin off of larger meats like some beef shin and shortribs and it worked nicely, no issues. The knife worked well in cutting the shin into bite sized pieces and also for cutting a pork roast into steaks.

I've restored a bunch of vintage knives.  I start with my King 300 and go to town removing pitting, starting along the bottom inch or so of the knife.  Sometimes I continue up the face to clean up the entire blade, and sometimes I leave the pitting up there to keep it more 'rustic'.  Once satisfied I've doe enough work along the blade road I'll thin just behind the edge if it needs it

For the handle, the same grit progression paper to clean it up, being careful to preserve any markings.  Soak in mineral oil, then use beeswax to fill gaps, if there are any.

Worth Restoring?

 It's also a heavier knife that it needs to be for that reason. I recommend getting a Victorinox and a little Kitchen IQ sharper, which was inexpensive and does a good job. You can buy it on Amazon!

Sabatier are wonderful knives, I have a couple. This new knife is extremely well made, however it comes with a plastic sheath with a built-in 'sharpener' that is supposed to keep the knife sharp each time it's sheathed, instead it rapidly dulled the blade from its incredible sharpness when it arrived. I'm keeping this knife as I can sharpen it on a stone myself. BUT, Do not use that sheath if you want your knife to stay sharp
