 So just it cuts better, it's more nimble. It feels better same exact steel. It basically corrects my issues with the icon and i think it's about 30 cheaper, typically and then it's got harder steel than the mercer and a more comfortable handle for sure. So this is really, i think, the go-to workhorse german style knife in my kitchen right here

 The meridian is not as much as the icon, but close. This is the most comfortable german handle i have other than the icon here, so close, so it's very comfortable. They do a great job on the grind here, keeping it thin back here so that because, like even on the icon, if you can kind of see how the bevel gets wider as it gets to the heel. That'S because when it thins out down here - and they didn't do a good job of keeping it completely flat, so the meridian does that better, it's thinner at the spine

I'Ve got the messermeister eight inch, meridian elite, stealth, chef's knife and uh the meridian elite line of uh. The messed meister has is kind of their equivalent of like the wusthof icon

 Make sure not to machine wash this!!! No scrubbers, at least not to use the green side! I did notice that the knife isn't as sharp when cutting meats. The center of the knife seems to lose its sharpness quickly, but the end and the edge closer to the point are sharp as can be. I ordered the ceramic rod so I hope this will help keep the knife sharper a little longer. By the way, I did read reviews that the knife loses its sharpness rather quickly

 I wanted to try something different, something westernized. This was my first non-Chinese knife and I have to say the weight of the knife is quite comfortable. The weight is balanced from handle to steel end. The rivets on the knife keep things from sticking and it is a wonderful edition

Great chef's knife but lacks edge

 I work in a kitchen and this knife is a good workhorse with both prep and line work. Takes an edge well. Keeps an edge well. I find myself doing a maintenance sharpening every week and a half or so with frequent honing

 At a week and a half it’s still cutting a tomato with no problems though. I might just be a bit OCD about my edges.

Actually, I'm so glad Amazon asked for my review. To say we are disappointed with this knife would be an understatement. It is not as sharp as many of the old knives we already had and it was highly reviewed. It was very expensive and I would send it back in a heartbeat if I could

 It isn’t the absolute sharpest but it’s far more durable than my Japanese stuff. And though it’s not the most beautiful it’s the most forgiving. It’s a wonderfully balanced knife and the shape and weight means that its up to every task I’ve put against it. While there may be more specialized options if you are only going to have one good knife in your kitchen this would be my vote

Newbie here, I have decided to buy a set of knifes for my kitchen and I need a suggestion, I am not a professional cook however I would like to have a set of knifes in my kitchen. My budget is around 250$. I have no clue about knife design and types.

 Grandma taught me how to cook and I’ve done a lot of home cooking since she started me out on meatloaf at 5 years old. I’ve used Henkel and Wusthoff since then and got the Vic 10+ years ago at the advice of a chef friend.

I digress, knives and the associated care/sharpening is not in my wheelhouse. I’ve always just used the standard Henckels block set from Macy’s and sharpened with those pull thru sharpeners that destroy the edge over time. I have finally learned how to use a strop though which! 

This isn’t really a gift idea. She asked me to her find one since the holiday sale season is upon us.

The only worry for me is that Victorinox says the blade is ground to a 15-degree angle, and I've read that the steel in these Victorinox Fibrox knives is not of sufficient hardness for that compared to a Zwillings or a Wusthof. We'll see how the edge holds over time

 I recently bought a honing steel which might help keep the edge true even with the softer steel.
