At that price point though, it's pretty good, but it's definitely not going to be the sexiest knife in your kit. I Have a friend that cooks with this knife so I've used it before. It's relatively well balanced, but the handle is very thin so I find that I have to choke up on the handle quite a lot, which isn't the most comfortable, especially for long cuttings sessions

Mercer Renaissance Chef Knife - WORTH IT?!

 Sharpness was pretty good and a few minutes worth of stropping time took care of that.  I'm torn between keeping and returning this knife..

.. The handle is too short, too small in profile, and the feel is off. It should be another 3/8th of an inch or so to feel matched to length with a bit more girth

 Not only is the handle too short, but the blade profile looks weird, its height too short at the bolster, and the blade is surprisingly too thin and flexible. Should have left it full height at the bolster as the 3.5" starts out, and then carefully and properly taper the blade profile correctly. You can see what I am describing looking at the photo

Good, but could be a LOT better...  Especially from Mercer. Dissapointed.

 I will say that I think that that angle needs to be increased to to a thicker angle probably closer to 17 17 to 18 degrees per side, which is roughly where this one is 17 or so just to keep it from rolling. because uh, the steel is actually the same steel as Wusthofs and Victor Knox is used. It actually says it right here. The X50 Cr Mov 15 steel

 It's rounded in all the places. It really teaches you that. Great rocking motion, Very forgiving steel that responds well to honing and as easy to sharpen on a stone. Uh good good, easy to work with, Balance? It's it's a it's just a really great knife

 It does a good job, just make sure you come all the way through on that heel. otherwise you'll get the slinky accordion style of stuff so you can tap chop with it. Just when you hit the front, make sure you come down to the back so that looks like this. so forget about my inconsistencies

 here. You can see that it it's decently thick in terms of sharpening up until that very end. I think they give you a decent amount of room to to sharpen this and have it go this way before it gets too thick back here. So they did a pretty good job with this part of the grind

This is a good quality knife, but I'm not convinced it's worth the cost. Just doesn't get real sharp. I purchased the Shun sharpening steel, along with the knife, and followed the video instructions to a T. Still not impressed

Cuts meat and vegetables like butter..... however it’s very brittle.

 The presentation of the knife when you open it is really cheap. Which I don’t care in terms of the actual knife - but if giving this as a gift it would be nice if it had nicer packaging and a quality sheath included like a lot of much cheaper knives have.

All in all, I would buy these if these where to get lost or something. In the cost around $100 to $200, these are the best in my opinion. I have tried many Chef knife before I came to these knifes but I do also use my Henckels also, because I love them both. I did received them very quick from Amazon, their time from payment to ship is like the same day which is why I love about Amazon

 I also own the J.A. Henckels Twin Two Star II 8inch chef knife, I do love the weight and balance better. However the great thing about these Japanese knives are they have a much lower angle on the blade

The handle is very well balance with blade. The D shaped handle works really well (Shun makes a left handed one but I think you might need to order it directly thought Shun). Shun offer free knife sharping for the life of you or the knife, depends on which one comes last. They stay sharp for a very long time

This is my fourth Shun knife and it looks like I'm going for the complete set. Me, and the rest of my crew! You see, I work as a sous chef in a busy restaurant and over the years have amassed two (yes 2!) complete sets of german knives, great knives themselves. But when my exec. chef recently threw over his beloved forschner knives for these shuns, I had to found out why

 My only complaint about the santoku is that it doesn't seem to keep it's sharp edge as long; it's a little thicker than the other blades and it takes more "steel" time to get it back to razor sharp. Pretty well impressed, I moved on to the big work horse - the 10 in. chef. Ok, it's now my favorite

 It instantly became my favorite! I used it for the bulk of my chopping and dicing (and I do alot of that). The d-shaped handles are fabulous; they give you a good grip, comfortable for the long haul and slip-resistant when your fingers are wet or oily.
