 Can you get it sharp? Yes, but it's not gonna last as long as some other knives you can get. At that price point though, it's pretty good, but it's definitely not going to be the sexiest knife in your kit. I Have a friend that cooks with this knife so I've used it before. It's relatively well balanced, but the handle is very thin so I find that I have to choke up on the handle quite a lot, which isn't the most comfortable, especially for long cuttings sessions

So my thoughts on this: This is a utilitarian knife. This is often frequently found in the culinary school student starter pack. Is the steel bad? No

Mercer Renaissance Chef Knife - WORTH IT?!

 Sharpness was pretty good and a few minutes worth of stropping time took care of that.  I'm torn between keeping and returning this knife..

.. The handle is too short, too small in profile, and the feel is off. It should be another 3/8th of an inch or so to feel matched to length with a bit more girth

 Not only is the handle too short, but the blade profile looks weird, its height too short at the bolster, and the blade is surprisingly too thin and flexible. Should have left it full height at the bolster as the 3.5" starts out, and then carefully and properly taper the blade profile correctly. You can see what I am describing looking at the photo

Good, but could be a LOT better...  Especially from Mercer. Dissapointed.

 I will say that I think that that angle needs to be increased to to a thicker angle probably closer to 17 17 to 18 degrees per side, which is roughly where this one is 17 or so just to keep it from rolling. because uh, the steel is actually the same steel as Wusthofs and Victor Knox is used. It actually says it right here. The X50 Cr Mov 15 steel

 It's rounded in all the places. It really teaches you that. Great rocking motion, Very forgiving steel that responds well to honing and as easy to sharpen on a stone. Uh good good, easy to work with, Balance? It's it's a it's just a really great knife

 It does a good job, just make sure you come all the way through on that heel. otherwise you'll get the slinky accordion style of stuff so you can tap chop with it. Just when you hit the front, make sure you come down to the back so that looks like this. so forget about my inconsistencies

 here. You can see that it it's decently thick in terms of sharpening up until that very end. I think they give you a decent amount of room to to sharpen this and have it go this way before it gets too thick back here. So they did a pretty good job with this part of the grind

 It'S the full premium deal here. It weighs 8.4 ounces or 240 grams with the balance right behind the bolster got that transition there. It has a 2

 So just it cuts better, it's more nimble. It feels better same exact steel. It basically corrects my issues with the icon and i think it's about 30 cheaper, typically and then it's got harder steel than the mercer and a more comfortable handle for sure. So this is really, i think, the go-to workhorse german style knife in my kitchen right here

 The meridian is not as much as the icon, but close. This is the most comfortable german handle i have other than the icon here, so close, so it's very comfortable. They do a great job on the grind here, keeping it thin back here so that because, like even on the icon, if you can kind of see how the bevel gets wider as it gets to the heel. That'S because when it thins out down here - and they didn't do a good job of keeping it completely flat, so the meridian does that better, it's thinner at the spine

 Make sure not to machine wash this!!! No scrubbers, at least not to use the green side! I did notice that the knife isn't as sharp when cutting meats. The center of the knife seems to lose its sharpness quickly, but the end and the edge closer to the point are sharp as can be. I ordered the ceramic rod so I hope this will help keep the knife sharper a little longer. By the way, I did read reviews that the knife loses its sharpness rather quickly

 I wanted to try something different, something westernized. This was my first non-Chinese knife and I have to say the weight of the knife is quite comfortable. The weight is balanced from handle to steel end. The rivets on the knife keep things from sticking and it is a wonderful edition

Great chef's knife but lacks edge

 I work in a kitchen and this knife is a good workhorse with both prep and line work. Takes an edge well. Keeps an edge well. I find myself doing a maintenance sharpening every week and a half or so with frequent honing

 At a week and a half it’s still cutting a tomato with no problems though. I might just be a bit OCD about my edges.

Actually, I'm so glad Amazon asked for my review. To say we are disappointed with this knife would be an understatement. It is not as sharp as many of the old knives we already had and it was highly reviewed. It was very expensive and I would send it back in a heartbeat if I could

  The biggest disappointment of this purchase is that I have to listen to my significant other complain about the knife every time she uses it… here we are at the height of the Jersey tomato season, and it won't even slice a tomato.  You would think someone at Amazon (or Messermeister) would suggest we return it. Well they didn't and the date is past. I'm posting this to Facebook today:  I bought an expensive knife via Amazon that, a couple of months later, is too dull to cut even a tomato

Biggest disappointment ever...

 It isn’t the absolute sharpest but it’s far more durable than my Japanese stuff. And though it’s not the most beautiful it’s the most forgiving. It’s a wonderfully balanced knife and the shape and weight means that its up to every task I’ve put against it. While there may be more specialized options if you are only going to have one good knife in your kitchen this would be my vote
