Ultimaker's are only worth it if you are a company. I am in charge of 3D printers in my company and our main FDM printer is an Ultimaker S5, and over the 1 year that we had it, it ran pretty much perfectly. It's cheaper to buy a 7k Ultimaker than hire a dedicated person to fiddle with a 250 euro printer. For me the printers are just a tiny part of my work because they are so reliable, we have a Prusa that we don't use because I don't have the time to keep it running.

That said, in the realm of professional-grade filament-based printers, the Ultimaker S5 is the best we have encountered, thanks to its large build volume, dual extruders, good print quality, easy setup, and smooth operation.

For home printers there is no reason to spend cash on ultimaker or makerbot. Ultimaker s5 for example doesn't support linear advance and it's firmware is a weird flavor of marlin meaning you can't even change it or add in features if you know what you are doing. Corners on the prints even with their "engineering" profile are not nice smooth fits like I can get on my Ender, my voron, or my prusas.

I use an Ender 3, a CR10 and a Ultimaker S5. If you have them dialed in, any of those can produce excellent buckets. That said, I’ve found the S5 the most reliable and requiring the least amount of maintenance.

It will be used in a modern industrial setting with good extraction and ventilation, primarily to fabricate molds for composites, but I'm sure I'll find other uses for it later. Reliability and precision are priorities. Would like a larger bed area to facilitate larger parts, but it's not crucial at this stage. Currently looking at the Ultimaker S5 Pro bundle as apparantly they're good for my use case.
