Was about to say Gigabyte AORUS B550i Pro AX. Perfect Motherboard for me (also running the 5600X with undervolt there, -29 is my sweet spot). But in General: aim for b550 or b450 Chipset. Check curve optimizer settings for free Performance boost/ undervolt.
