 They call it the 8 inch model. So if you definitely get your full eight inches and then a little bit, I'm not going to give you a blade length, because where do you measure to when you've got this kind of angle, hearing stuff? So just the cutting edge length, the blade thickness at the spine. It'S two point: two millimeters. That'S point: zero, eight, six, five inches the blade depth from the spine of the blade to the cutting edge at the largest point here and, of course, it's gon na get thinner until it comes to nothing is five point: five, eight centimeters! Well, that's almost exactly what they claimed, they claimed 55 millimeters and it's fifty five point

 This hammered finish on the face of the blade here. I don't know how to say the Japanese word for how that finish is called. I think it's sushi me finish. I probably wrong - I probably butchered that word, so I'm not going to do it second time, but that's the hammered finish

 V at the core, rockwell of 62 and higher hand hammered nice premium, quality g10 and the nice polymer sheath. It'S a really good thing, and what we got is a typical chef's blade. You know this drop point with a loaded belly here, so it's great for rocking. Let'S do the sizes, the cutting edge is twenty point, eight centimeters long on this one, which is eight and 1/8 inches

 You know it just cuts very, very well. So to summarize, this knife special features: it's a 60-day hand, build process to make this knife 60 days two months. They do a cryogenic temperament with this, so they drop it in liquid nitrogen for the steel tempering, which gives it a lot of durability and strength, while still leaving it with some flexibility. I love the sixty six layers of Damascus, the Oz 10v steel is indeed a super steel, really really good

 Not all steel is created equal, even when it is of the same type (here, AUS-10v). There can still be surface and subsurface discontinuities.  Do I like mine? Yes. Would I buy again? Maybe/probably

 Also, they branding with the lion etched into their products just really does it for me  Handles: They have different handle options for you to choose from and the impregnated carbon fiber on this one has held up better than my high end knives.  DISLIKES:  The steel: this is the crux of the issues many people have. This knive uses AUS-10v steel, which is a high carbon steel which is supposed to be corrosion resistant.  With high-carbon knives you get the advantage of harder knives which can be sharpened very sharp and should hold their edge longer

Buy, but with caution

 Although the weight can also weigh on you on long prep days.  For the price, I think this makes for quite a nice knife for the hobby cook who's more used to a japanese style knife or are looking to get into the world of japanese knifes without a 100:0 grind profile. The looks are nice and for what it is, the quality is passable. Having said that, for those who are looking at this for a professional setting, I would caution you against it and look at Kiritsuke from the likes of miyabi or tojiro who is comparable in price but are also better performers in a professional setting

 Lastly, the balance of this knife is quite off, and by that I mean the center of balance is not located anywhere near the handle.  Having said that, there's a reason why I kept onto this knife for a year and a half as my main chef knife. Despite the lack of knuckle clearance, the handle is actually really nice and comfortable. In addition, even though the balance is not where I would like it to be, the weight of this knife (or rather heft of the knife), gives you confidence when you use the knife

The down side is the blade finishing is a little "cheap." The finish between the flats of the steel and the hammering is uneven due what appears to be a quick sandblasting and feric chloride treatment to bring out the damascus folding pattern, however the areas around the hammer strikes are still very polished. So the overall blade finish looks rushed and uneven. I decided to polish this up myself as it was bothering me

The handle is ergonomic for my grip, and the transition of handle to bolster to blade is fantastic for pinch gripping (unlike most Japanese style knives).

There is a slight (what appears to be) lamination line near the bolster that looks a little cheap as well but is simply cosmetic

I don't know how to feel.

 Half of the strokes bent the paper. I still like the knife but wanted to offer my honest opinion so far. I bought this rather than a Wusthof or Shun because of the price. I will keep you posted

 I will follow up with later review after I have used it for a while. What prompted the early review? I read another review about the quantum1 series sheath being cheap and glued rather than laced as it appeared and it reminded me of my immediate feeling when I opened the pin that was included with my shogun series knife. The pin is very poorly/cheaply made and from cheap materials. The clasp or pin is something so flimsy and cheap, that is something you would typically expect to see with a “made in China” sticker on the back

This may seem trivial ( and perhaps it is) but my first thought was “if they are obviously combatting the “inferior quality” reputation of other Chinese companies, and they talk so much of details, quality materials and meticulous packaging, why would they potentially undermine it all with a gum ball machine pin? They would have been better off not including a pin at all ( which no one expects anyway and they only included as a way of “wowing” the customer.” I can assure you that it did not wow me

 I bought this rather than a Wusthof or Shun because of the price. I will keep you posted. I was NOT paid by the company or given discounted product for leaving this review ( duhhhh—lol)

Sharpest out of box ever seen .  Suspicions/concerns however

1. The quality of materials just does not live up to the $130 price tag. Compared with my equally priced Zwilling (center in the photo) the steel feels a lot less rigid, and it just generally feels more cheaply made.

 There are small, unsightly seams where the handle material meets the metal butt of the knife. And the logo on the butt of the knife is off center.

Great Knife on the Second Try / Great Customer Service / Questionable Manufacturing

  This new one also looks more genuinely engineered. In the side-by-side photos I’ve attached, you can see that the first one I received has this fake-looking damascus etching pattern. The second however, has a very subtle damascus pattern which looks to be real (ignore the color difference, it’s just the lighting). Had I received a knife like this free one, I wouldn’t have returned it

  I really wanted to like this knife, but I'm sorry to say that it did not live up to the praise I've seen in Amazon and YouTube reviews. Three issues I had:  1. The quality of materials just does not live up to the $130 price tag. Compared with my equally priced Zwilling (center in the photo) the steel feels a lot less rigid, and it just generally feels more cheaply made

 It’s much, much nicer. The steel feels much more rigid (has a nice “ping” when you tap it with your fingernail), the build quality is just overall more precise, and this one arrived VERY sharp (see attached video for demonstration).  This new one also looks more genuinely engineered. In the side-by-side photos I’ve attached, you can see that the first one I received has this fake-looking damascus etching pattern

  I took off one star for the sheath. It is cheap and is not worthy of the knife it houses. The plastic tab meant to hold the knife in is tied to a rope. The knot came off within a week

 And there are a few Gyuto knives with the exact same design as this one in all fairness to Dalstrong. To me, it feels and performs like a classic western. Heavy, strong and ready to go through anything with little finesse. Delicate and precise this one is not
