 They call it the 8 inch model. So if you definitely get your full eight inches and then a little bit, I'm not going to give you a blade length, because where do you measure to when you've got this kind of angle, hearing stuff? So just the cutting edge length, the blade thickness at the spine. It'S two point: two millimeters. That'S point: zero, eight, six, five inches the blade depth from the spine of the blade to the cutting edge at the largest point here and, of course, it's gon na get thinner until it comes to nothing is five point: five, eight centimeters! Well, that's almost exactly what they claimed, they claimed 55 millimeters and it's fifty five point

 This hammered finish on the face of the blade here. I don't know how to say the Japanese word for how that finish is called. I think it's sushi me finish. I probably wrong - I probably butchered that word, so I'm not going to do it second time, but that's the hammered finish

 V at the core, rockwell of 62 and higher hand hammered nice premium, quality g10 and the nice polymer sheath. It'S a really good thing, and what we got is a typical chef's blade. You know this drop point with a loaded belly here, so it's great for rocking. Let'S do the sizes, the cutting edge is twenty point, eight centimeters long on this one, which is eight and 1/8 inches

 You know it just cuts very, very well. So to summarize, this knife special features: it's a 60-day hand, build process to make this knife 60 days two months. They do a cryogenic temperament with this, so they drop it in liquid nitrogen for the steel tempering, which gives it a lot of durability and strength, while still leaving it with some flexibility. I love the sixty six layers of Damascus, the Oz 10v steel is indeed a super steel, really really good

Review of the Dalstrong Shogun Series X 8inch Chef Knife A PREMIUM Blade Indeed

The down side is the blade finishing is a little "cheap." The finish between the flats of the steel and the hammering is uneven due what appears to be a quick sandblasting and feric chloride treatment to bring out the damascus folding pattern, however the areas around the hammer strikes are still very polished. So the overall blade finish looks rushed and uneven. I decided to polish this up myself as it was bothering me

The handle is ergonomic for my grip, and the transition of handle to bolster to blade is fantastic for pinch gripping (unlike most Japanese style knives).

 Although the weight can also weigh on you on long prep days.  For the price, I think this makes for quite a nice knife for the hobby cook who's more used to a japanese style knife or are looking to get into the world of japanese knifes without a 100:0 grind profile. The looks are nice and for what it is, the quality is passable. Having said that, for those who are looking at this for a professional setting, I would caution you against it and look at Kiritsuke from the likes of miyabi or tojiro who is comparable in price but are also better performers in a professional setting

 Lastly, the balance of this knife is quite off, and by that I mean the center of balance is not located anywhere near the handle.  Having said that, there's a reason why I kept onto this knife for a year and a half as my main chef knife. Despite the lack of knuckle clearance, the handle is actually really nice and comfortable. In addition, even though the balance is not where I would like it to be, the weight of this knife (or rather heft of the knife), gives you confidence when you use the knife

Weird ergonomics and a mediocre metal

 I tried to clean the knife with a soapy sponge, but the sponge was shredding at the edge of the knife, which never happened with my other knifes.  In a panic I bought a pair of cut resistant gloves that got 800+ positive reviews on Amazon, but the knife cut right through it. Then I bought another pair with embedded steel mesh and yet another pair with 10,000+ positive reviews. Both of them failed again miserably

 Last night wife made a delicious bull frog dish, and this morning I found the knife to be quite like a serrated knife. To be sure,she said she was careful to avoid cutting the big bones such as the frog legs, but she did cut the smaller bones. I was able to correct 80% of the damage using a sharpening steel rod and a ceramic sharpening rod, but the damage is still quite visible. Three stars are out for the edge being too thin to cut small frog bones

  I took off one star for the sheath. It is cheap and is not worthy of the knife it houses. The plastic tab meant to hold the knife in is tied to a rope. The knot came off within a week

 And there are a few Gyuto knives with the exact same design as this one in all fairness to Dalstrong. To me, it feels and performs like a classic western. Heavy, strong and ready to go through anything with little finesse. Delicate and precise this one is not

 When I posted this review the first time, I mentioned that my knife had come with a defective sheath and the response from the representative (not the founder, which was stated in their emails at the time), had a response that was not consistent with those from other reviews: an offer to credit the cost of a generic sheath that probably wouldn't fit this knife. They have since updated their email messages, and the same representative later contacted me and went above and beyond any response I would have expected. So much so, that I thought I had misread their email at first. I should also mention that even with this previous consideration, I had still continued to buy several more of their knives for myself and as gifts

This knife will knock your socks off.

 Not all steel is created equal, even when it is of the same type (here, AUS-10v). There can still be surface and subsurface discontinuities.  Do I like mine? Yes. Would I buy again? Maybe/probably

 Also, they branding with the lion etched into their products just really does it for me  Handles: They have different handle options for you to choose from and the impregnated carbon fiber on this one has held up better than my high end knives.  DISLIKES:  The steel: this is the crux of the issues many people have. This knive uses AUS-10v steel, which is a high carbon steel which is supposed to be corrosion resistant.  With high-carbon knives you get the advantage of harder knives which can be sharpened very sharp and should hold their edge longer

We don't have too many complaints about this chef knife, but we will note that the handle was a bit small for our larger-handed testers. This made it difficult to obtain significant amounts of leverage while trying to cut through tough squashes.  I have actually grown to prefer the weight of the G-2. After a TON of vegetable chopping, the light weight of the G-2 is a godsend.  The steel is not obnoxiously hard (HRC) unlike some other japanese knives, so any decent steel will do wonders on it.  In conclusion, this is hands down the best general Chef's knife I have ever owned

 - Have metal that can be sharpened to the point where it shaves arm-hair. - Retain its edge assuming regular knife-steel use. - Not stain (only applies to stainless steel knives)  The Global G-2 easily exceeds these standards. It's a 'good' knife

 They use the stamping technique in order to make the knife much lighter. There's a forged version (the GF-33) but it's heavier and has a solid handle. I have actually grown to prefer the weight of the G-2. After a TON of vegetable chopping, the light weight of the G-2 is a godsend

Absolute Perfection in a Knife

 It shouldn't interfere with cooking at all. It's probably safer if anything because you can't really stab yourself or cause any accidental harm when you are cleaning it.  Sharpness-It comes sharp and it stays sharp for a long time. But how it keeps its edge really depends on how well you maintain it

 However it's sharp so you can use it to get better control when peeling veggies so you don't have to switch to your paring knife for small jobs.  Lightweight-Much lighter than traditional chef knives due to the design for the handle but it is still very well balanced. But if you're used to traditional knives, make sure you hold the Global at least once to get a feel for the weight before buying.  Point-The point is slightly rounded
