 I was looking for a grill that not only performs well and looks good but a grill that was rock solid and rust proof. Overall the PK360 is a very stylish mid-sized grill and smoker. Awesome design and build quality which produces great results plus it sparks plenty of interest from those who see it up close in person. This is a grill I'm sure I'll have for years to come

 Before we begin, for all you fellow barbecue geeks out there, let me set the scene with a quick backstory to the evolution of PK grills. In the early 1950s, Hilton Maggs of Tyler, Texas made what many considered to be the perfect charcoal barbecue grill. He designed and manufactured a cast aluminium grill and smoker, calling it the Portable Kitchen, and sold it out of the back of his car in the American Mid-South. The company was purchased from Maggs in 1958 and manufacturing moved to Little Rock, Arkansas, where it remained until fire and business issues stopped production in the mid-1970s

 These are precision injected moulded cast aluminium, finished to a high level and feel reassuringly heavy. Just covering design, construction and assembly at this point. I will update the review after I've used the grill for several meals.  The PK360 is beautifully designed and manufactured to a high level of precision. The cast aluminum "clamshells" are quite attractive in their precision and quality of workmanship

 PK claims to have a amazing warranty but there's a reason they don't accept real reviews on their website. Customer service says "we can't control the exposed environment", how about saying we slapped on a really crummy coat of paint or powder coat and don't care what they look like for the customer within a year of use. Super bummed by a US company having such horrible support and QC. Strong avoid on this one

(6) At the end of a smoke, I still seem to have plenty of water in my smoker in the water bowl, and it is heavy and greasy to remove. I like to dump mine in the sink and then wash it, but I worry about dropping it every time

 I dithered about which size to get, decided the smaller 14 inch one was too small, and thought about the larger 22 inch version, but this 18 inch one fits my needs well. It easily fits a large brisket and some ribs and uses less fuel than the larger one. No problem. The 14 inch smaller one really would have been too small though, I can see that now that I have used my 18 inch one enough

Quite happy with tasty results from my smoker!

  Cons: I bought this because I prefer cooking with charcoal. I knew that meant it would have to be maintained a bit more than an electric or even propane smoker. All the reviews said this thing was rock solid and could cook “for 18 hours holding 225 the whole time!” That’s not true. At least not for an 18” smoker

 Access to the charcoal is extremely limited unless you take the whole thing apart. This isn’t ideal when you’re brisket is stalling and your fire has gone out. The access door is just too small to really get in. I primarily use the access door to stir my charcoal when needed

 If temps run away on you, just adjust the vents, and if it really gets out of control, add some cool water to the water pan. I can dial the smoker within 20 degrees of anywhere from 170-300. If temps drop on you, just give the fire a bit more air. Very small changes make big differences so you can really finesse it

Great cooker with a lot of buts

So, this review is in comparison to a $59 charcoal grill of the same configuration that I’ve used for the last 15 years, compared to this $460, Webber. I’m not sorry I bought it, but Webber would do well to make a couple inexpensive corrections. This first is that the center section has no handles, unlike my $59 grill. The center section is heavy and awkward

Happy, but.......

  I'm not going to go into all the technical aspects of this smoker, but I will say this -- set up (excluding the silicone temp probe grommet) took me about 30 minutes. The silicone grommet took far longer. The trick -- use some silicone spray around the opening. Fold the one edge over the through the hole, starting the lip on both sides

 In 2 hours of use, the coals look like they barely burned down.  Overall, I have never used a smoker that has been so easy to operate and maintain. I should have purchased this one years ago and foregone the frustration and pain of less expensive smokers. It has brought the joy's of BBQing back to me once again

 Like others, I will get a 14½" pizza pan and stick it in as a heat deflector. Then I will have better access to my fire box to place more charcoal in, when needed. In 2 hours of use, the coals look like they barely burned down.  Overall, I have never used a smoker that has been so easy to operate and maintain

Cheapo BBQ smokers v. WSM -- NO COMPARISON!

 The day I got it I decided to test it out on a 14lb brisket that would require a 14-16 hour cook time. I'm aware that this isn't exactly a beginner cut and it was a risk. I highly recommend youtubing a few videos on how to use this smoker or browsing some of the online forums dedicated to it. There is apparently a huge community of wsm users and the resources you can find online about it are invaluable

I have zero experience with smoking other than I love smoked food and I spent a good amount of time last week researching which smoker to purchase and how to use them. What I wanted was a coal / wood burning smoker that is easy to use and one which wouldnt require constant attention especially on long smokes. I settled on the WSM 18 inch. Assembly was a breeze but keep in mind there are no spare parts included with the hardware kit

This smoker is worth all the hype.

 It is nice, however, to have the choice. I also recommend using high quality foil to wrap the pan and stones for easy clean up. Happy smoking!

This thing is wonderful. I watched a lot of YouTube videos before I chose and started using this system and I urge you to do the same. As expected, the first two or three times I used it, it was hard to maintain the temperature I wanted. After that it became easier, both because I got better at estimating how much the inlet vents needed to be open and how much to open the top exhaust vent, and because the door and rims seal better after they start to get a layer of combustion byproducts deposited there

My wife says it is one of the best investments we've made in outdoor cooking and she figures its paid for itself already. We never go out to eat as we like our own cooking better and the WSM has taken our meal prep in a whole new direction

 With that success, I am going to try smoked beef jerky next. I especially recommend Harry Su (Slap Yo Daddy BBQ) and T Roy Cooks as YouTube inspiration. I used a mixture of water and apple juice in the water bowl for several cooks, but have since started using foil wrapped large smooth stones -- the water or stones act more as a temperature regulator than anything. You will find that spraying the cooking meat with a mist of water does more to set the crust and keep moisture in than water evaporating from the water pan

I love love love my WSM!!!!

 That said, it definitely veered me towards the Weber 22" smoker. I liked the size to price ratio compared to the eggs and I really loved the idea of a side hatch to keep the fire tended to. Also, don't listen to the bone heads on this review panel and think you shouldn't get the 22". In my experiences, you always end up wanting the upgrade
