I've had it for just a day at work now but it's made a good impression in that time. First off, this thing is HEAVY for the size and the steel it's made of (AUS6M), while softer than most Japanese stainless, can really take a beating. The balance on it feels very nice, perfect for a pinch grip. It's marketed as an all purpose but I think it favors meat over vegetables- it's a little thick to get perfect thin slices of root veggies or to glide through peppers, although it could be used for that in a pinch

Last Black Friday I bought a set of Wusthof Classic knives on sale and they've basically ruined me as far as knives go - I really like them...but I'm also not willing to pay for them all the time haha

 And I haven't had it that long either, only used it a dozen times or so, so can't say much on durability.  It's a decent knife for the money, but I suspect the Victorinox 5" chef's knife is better as they generally have a nice thin blade.

The knife is very sharp and comfortable, but the blade is really thick and stiff which prevents it from doing well for boning. It’s worked well so far for trimming large cuts of beef and pork but is not as adaptable as I was hoping.

 The blade is very sharp & sturdy. I have been using it daily for 2 weeks in a professional kitchen. After two weeks of daily use, I had to finally run it across a steel to hone it. I feel it holds an edge very well

First off, this is not a Henkel, Wustof, or Shun quality knife. That said, it is an exceptional knife especially for the price. This is made by the same company that does make Shun. I would consider this blade on par with a Forshner or Dexter Russell

 While it is not as refined as a more expensive knife such as a Shun or Wustof, it is a great inexpensive everyday banger, and if I lose it or drop it, no big deal.

Great knife for for a great price.

 I have been using it professionally for a couple of weeks and it is very sharp, light, and fairly comfortable. The handle is nice, with a full tang and riveted scales, however; it is somewhat smooth for a knife with an NSF certification. I would like a more grippy handle personally because I handle a lot of slippery food and my gloved hands get wet when processing, making the handle a little slippery for my gloves. Overall a knife with a sharp edge that holds up under heavy use

 For the money it's a nice knife. As I mentioned above I would prefer something with different balance, but it cuts fine. It was nice to have a longer knife for making cuts in big piece of meat.

Our favorite paring knife is from Victorinox. In our testing it performed as well as those five times more expensive. It’s cheap enough that you won’t cry if you lose it.

 I used the serrated for tomatoes, bread etc and the thick for avocados and sturdier cutting needs... this one I use for strawberries, mushrooms, etc

 At this price you cannot go wrong and will have a better knife than many 3 times the price.

Wasn't expecting to like this as much as I do, given it has a thin blade.

* A beater Sabbatier that I had since I was a student and takes care of rougher tasks like breaking down seafood. I learned to sharpen using this as I was a home cook with mostly crap knives and didn't want to start out on my J knives. Still sees a lot of use.

Next we have a couple of palette knives - the larger is PME - picked it up because it was cheap and I don't use it that frequently. The smaller one is Ateco and that one sees a lot of use for non baking tasks - really good for spreading mayo and pastes.

Next we have a [Tanaka Ginsan 150mm]([URL REMOVED] and no I don't actually cut onions as pictured (if you follow the link) - that was a quick and dirty test. I love how nimble this one handles and although I favour wa handles by now, it still fits my pinch grip perfectly and is great for more delicate tasks.

This entire series is awesome ( I own the boning and chef knife) and is designed to keep up with wusthof, and it competes well. The paring knife however did not come razor sharp like the other knives did, took some work on my stones but I was able to get it there.

Weakest Link, but good

I'd personally say Victorinox is where you get the highest price to quality ratio. It's a very good quality knife, for not a lot of money. There's nothing quite as good below that price point. And above that price the quality can definitely improve, but you'll get diminishing returns with each price bump
