I've had it for just a day at work now but it's made a good impression in that time. First off, this thing is HEAVY for the size and the steel it's made of (AUS6M), while softer than most Japanese stainless, can really take a beating. The balance on it feels very nice, perfect for a pinch grip. It's marketed as an all purpose but I think it favors meat over vegetables- it's a little thick to get perfect thin slices of root veggies or to glide through peppers, although it could be used for that in a pinch

Last Black Friday I bought a set of Wusthof Classic knives on sale and they've basically ruined me as far as knives go - I really like them...but I'm also not willing to pay for them all the time haha

 And I haven't had it that long either, only used it a dozen times or so, so can't say much on durability.  It's a decent knife for the money, but I suspect the Victorinox 5" chef's knife is better as they generally have a nice thin blade.

The knife is very sharp and comfortable, but the blade is really thick and stiff which prevents it from doing well for boning. It’s worked well so far for trimming large cuts of beef and pork but is not as adaptable as I was hoping.

 The blade is very sharp & sturdy. I have been using it daily for 2 weeks in a professional kitchen. After two weeks of daily use, I had to finally run it across a steel to hone it. I feel it holds an edge very well

First off, this is not a Henkel, Wustof, or Shun quality knife. That said, it is an exceptional knife especially for the price. This is made by the same company that does make Shun. I would consider this blade on par with a Forshner or Dexter Russell

 While it is not as refined as a more expensive knife such as a Shun or Wustof, it is a great inexpensive everyday banger, and if I lose it or drop it, no big deal.

Great knife for for a great price.

 I have been using it professionally for a couple of weeks and it is very sharp, light, and fairly comfortable. The handle is nice, with a full tang and riveted scales, however; it is somewhat smooth for a knife with an NSF certification. I would like a more grippy handle personally because I handle a lot of slippery food and my gloved hands get wet when processing, making the handle a little slippery for my gloves. Overall a knife with a sharp edge that holds up under heavy use

 For the money it's a nice knife. As I mentioned above I would prefer something with different balance, but it cuts fine. It was nice to have a longer knife for making cuts in big piece of meat.

The sharp, V-shaped prongs of this curved carbon steel fork held firmly to roasts while staying out of the knife’s way, worked well for transferring slices to a platter, and didn’t bend when lifting or turning roasts. Its rounded nonslip rubber handle felt secure and comfortable.

I ordered this knife based on the stellar reviews. I returned it. LOL. To me, the blade did not seem all that sharp (especially for a new knife) and as you cut down the blade got thicker so it didn't penetrate easy and I had to give it an extra push to cut through the onion

 If you are looking for your first real chef's knife, I would say to definitely consider Mercer's lineup: - the Genesis if you can justify spending around $40. - the Culinary Renaissance looks to be even a little nicer at around $50. - the Millennia at around $20. - the Culinary Ultimate is currently around $12 if you're really hard up

  The Mercers eventually stood out because they are a respected brand, and have some highly rated offerings at budget price points. Specifically, it was between this knife (the Mercer Genesis) and the Mercer Millennia. I chose the Genesis because of the forged construction and full tang, so it has a more premium look and might be more durable over time.  The difference between the Genesis and my old knife has been like night and day

 So I put on my consumer hat to find the perfect chef's knife. After some research, I decided to avoid getting a knife with a full bolster or serrated edge because of the potential to interfere with sharpening. I decided that a Japanese style knife would likely be too expensive. For German-style knives, something like a Wusthof would also be out of my price range

 Along with the knife, I picked up a cheap honing steel, and have been using it every time I use the knife. After about a month of daily use, the edge is still very usable but not as light saber-like as it was initially. At some point, I'll pick up a set of whetstones and have a go at them.  So far I am very pleased with this purchase
