The Imarku chef's knife is a decent all arounder that is a good introduction to Gyutou style knives. With less rocker than European-style chef's knives and typically thinner blades, it can take some adjusting to get used to working with Gyutou knives. This blade was a decent performer across the board but didn't truly excel at any one thing. As expected from this style of knife, it took to the more delicate knife work like julienning and chiffonades handily. Equipped with a beautiful wooden handle, this was one aesthetic knife for the price point. 
This knife's most significant shortcomings were apparent while trying to break down big and tough root vegetables and squashes. The knife struggled to push through sweet potatoes and butternut squashes. Once these veggies were broken down into smaller pieces, the blade had no trouble moving quickly to chop or dice them but getting to the point was a process. All in all, this is a well-rounded knife that is ideal for someone wanting to try a Gyutou style knife without breaking the bank.

 I mean drop a hair on it and it's sliced in two sharp. I just knocked out Thanksgiving dinner with it. It chopped all my veggies for dressing and carved the turkey with ease. Really a great tool and a long-overdue investment for my kitchen

 Even though I worked as a chef de cuisine for 30 years, it got me. But, a good sharp edge helps lessen the damage , so that’s a plus. Sleek, sexy, sharp and a wee bit dangerous

The only thing I can fault this knife on is that there is nothing to let your fingers know when you’re about to slip to the rear of the blade. No exra thickness, no ridge, nothing. I bought this as a substitute knife to use while my knives were being sharpened. I'm used to the Shun knives that have a good amount of weight in the handles. The Wasabi knives are lighter weight. I put duct tape on the handle to try and weigh it down a bit, to where I was more comfortable and it helped more for the Santoku knife than for the Chef's Knife

Furthermore, one thing I've always enjoyed about all of KAI's brands such as Shun and Kershaw is that they are not afraid to put very acute grinds on their knives which allow them to acheive superior edge geometry and slicing ability! My guess is that like Shun, these sister company Wasabi knives are also probably ground to the same 16 degree edge. Very cool! I've also been using these knives for a while now and they seem to hold an edge just as well as my $100 Wusthof knives. And oh, did I mention that these Wasabi knives are made in Japan? That's right, these knives are actually made in Japan folks! So you're getting Japanese quality at an exceptional value here.

 Lousy quality steel will usually NEVER take an edge like that. So this clearly demonstrated to me that KAI is using a good quality steel with a superb heat treat in these knives! They obviously care as much for their economical housewares line as they do for their Kershaw and Shun lines as well! Good job KAI!

The handles are crafted in a style that pays homage to traditional Japanese cutlery (i.e. wooden handle with resin ferrule) but in this case, to keep costs down, KAI went with Poly handle and steel ferrule. Honestly, I found it rather attractive looking, and even more attractive once I got the product in hand

Considering I've been an avid knife collector for quite some time and the fact that I also sharpen knives professionally, I consider myself a bit of a knife snob at this point. That being said, I honestly wasn't expecting very much when I saw these kitchen knives at a price of less than $30 per knife. I am very familiar with KAI and the fact that they also manufacture Zero Tolerance, Kershaw, and Shun knives, which was honestly probably the only reason that prompted me to pull the trigger on these knives and give them a try. Boy was I surprised!!!

 I use 2 magnets per blade. The magnets are 1"X 2" block magnets.  Wasabi is what I order from here on. You can pay more, but why?

 Since he lost his good knives and had some fairly lousy ones that wouldn't keep an edge to work with, I decided to get him some decent ones. I was looking for Japanese style, single bevel and reasonably high carbon steel. These seemed to fit the bill given my budget.

This is a solid knife, however, the handle is made of cheap plastic which makes the whole product feel cheap.
