It would be easy to use a coffee maker, but I've opted for something that takes me back to the essence of what coffee brewing is all about, having total control over the entire brewing process. I love the thoughtful design of the Kalita system, the way the filters are designed to keep the brewing coffee away from the side wall, the way the flat bottom with 3 holes gives a precise bed of grounds that allows for perfectly even extraction, and the nicely built stainless steel dripper that is lovely to use, and a breeze to clean up. So,how does the coffee taste? Well, that depends on so many things. At this level, the dripper is merely one part of the process, including where and how the beans are grown, the roasting process, the age of the roasted beans, the type of grind, the heat of the water, and finally, the method of extraction, which in this case is the Kalita 155 Wave Dripper

It's also fairly small and compact. This point is important to note, because it really is for brewing a single, smaller cup of coffee. It seems comfortable with a 12g does of coffee, although I've done 15g just fine. I did try 21g once and that seemed like I had to pour a little drip of water every couple of seconds to keep it brewing without overflowing

The other thing I found is that I wanted to just sit, sip,and appreciate it. I use a coffee that is roasted here in town. It is more expensive than the canned at the store, but it is a lot more satisfying. So

Once filled with the filter and 24g of coffee, there's precious little room for water, so even with a pulse method, you'd better not stray for more than 10 or 15 seconds. I refill the dripper about every 50g, and at that point grounds are floating above the top of the filter. Not over the edge, but in the middle the grounds are like a muffin top. How are the results? I'm happy with the resulting coffee

Edit: For those that prefer a slower extraction - you can always grind the beans more finely - that will slow the extraction, as finer grounds "clog" the filter. But, as always, any adjustment to temperature, speed, grind will result in a different flavor. 1.Rinse your filter to remove paper residues, and put the grounds into the filter/dripper

My formula for dark roast coffee using the Wave 155: 23 grams of coffee ground at #21 (think kosher salt) on a Baratza Virtuoso, 360 grams of water at 199 to 201 degrees, with just one stirring following the initial soak.
