I use a ThermoWorks ThermoPop. Good quality, relatively inexpensive compared to it's big brother, and it's fairly responsive & accurate.

The cheaper thermoworks thermopop/dash/whatever they have now is all you need. The thermopen isn't worth 3x the price for slightly faster and more accurate. Anything else is garbage (yes I've had lavatools and far too many top rated Amazon thermometers).
