is the Vega 64 worth it for running 2021 games? And what CPU should I go with it?
Vega 56/64 is inflated because of the Cryptomining performance. You can buy a GTX 1080 Ti / RX 6600 XT at the same price. Buy a Ryzen 5 3600, B450/550 motherboard, and 2x8 (16 GB) RAM for around $250-300 and for GPU:. Look for a decently priced GTX 1080 around $400 or GTX 1070 around $300.

Went from a Ryzen 3700x to a 5900X with a RTX 3090 FE : Big performance uplift (almost 50% gain on certain titles)
GTX 1080 Ti paired with a 2700X gaming at 2560x1600. Swapped out the 2700X/RAM/mobo for a 5900X/double the RAM/X570. Note that I never had "out of RAM" issues in the past so I doubt doubling it had any impact on these games--32 to 64GB is upgrading from overkill to even more overkill.

Is RTX 2070 Super enough for ultrawide?
I get between 60-120fps in AAA games although I frequently lower a few settings to High instead of ultra. This seems to be the sweet spot card as you will need to move up to a 2080 Ti to see significant gains in performance (2080/2080S won't yield more than \~15% improvement).
G9 Ascension and impressions/thoughts
So here it appears to be consistently "frame doubling" into the VRR range, and the range is small thus no flicker. This is only my experience on a GTX 1080 TI, so your card may be a factor as well (maybe with 2080TI there are less frame dips and thus less LFC triggering at high refresh?). That said, I will keep this thing regardless, as I use majority for productivity and also have a G-Sync FALD monitor right next to it (X27, off camera in my pic).

i7-10700K, 32GB RAM, Asus ROG Maximus XII Formula, GTX 1080 TI. I can't figure out what's going on. I pair the HMD with the wireless app and get full signal, but the image is jumpy and super-pixelated.
