My mom makes a special type of roti that doesn't become rubbery after being stored for a couple days (she makes them for my dad who drives a truck for extended periods of time). Apparently the hot water denatures proteins in the flour that would otherwise make it stretchy.

Anyways, her hands are always red and irritated after making these and kneading the dough.

I'm hoping someone here has some experience with gloves that are heat resistant, food grade, and also flexible enough to wear when kneading dough... any recommendations? Price is no object.

<p>A few people asked for my mom&#39;s recipe so I asked her and here it is: 4 cups flour, 4 tbsp oil, half tsp salt (but you can add more if you prefer), mix everything together aiming to coat the grains in oil evenly, add 4 cups boiling hot water (she says that this might seem like a lot but flour absorbs more water when the water is very hot), mix with a spoon, knead until smooth (about 3 minutes).</p>

 Began making artisan sourdough earlier this year and the lugs on the bowl that connect it to the cap screw base failed. Now the bowl won't stay in place for ANY mixing job at all and the bowl part is constantly our of stock at KitchenAid and parts retailers.  That's insane. I mean every single one of these attachments to me is overpriced. But even at that price, there's a couple that I might still consider getting anyway, just because dedicated devices for that are really, really expensive. Also, one is the meat grinder, and the other just because it's going to be that pasta press

Stopped Working

The classic model is all that is needed in 99% of the home kitchen. I feel this mixer is second only to the oven for a MUST. Every house needs this item NO JOKE. I can't say enough about the quality of the KitchenAid mixer

 So basically the machine just like this you power it on power on on this side right here. you do have your speed whatever speed one through ten They go by tools two, four six eight ten. In the middle will be the single numbers that is on and off. On the other side you have your unlocker, you bring it up

 This is would be where some adapters will go like we don't have any one. So we leave the number the name looking very well. So to start off with this you will have to do push this open it will bring it up, you put your bowl in it and you make sure your like you make sure you lock it in so it will not get out of place when you're mixing. So you make sure you lock it as you can see it does not come off your adaptors
