 Since I was looking for something particular and based my decision partly on that factor, I'm knocking a star off. I'd only take half a star off it was an option. I'm putting the review on this knife because it's specifically a santoku and should have a single bevel as part of the style. The other 2 knives were a paring knife and a chef's knife

 Since he lost his good knives and had some fairly lousy ones that wouldn't keep an edge to work with, I decided to get him some decent ones. I was looking for Japanese style, single bevel and reasonably high carbon steel. These seemed to fit the bill given my budget.

I bought this knife and 2 others in this line as a gift for a friend who is a fan of Japanese style knives. He's also a metalsmith and previously worked at a 5 star restaurant, so he knows knives. Since he lost his good knives and had some fairly lousy ones that wouldn't keep an edge to work with, I decided to get him some decent ones. I was looking for Japanese style, single bevel and reasonably high carbon steel

 I'm putting the review on this knife because it's specifically a santoku and should have a single bevel as part of the style. The other 2 knives were a paring knife and a chef's knife. Since those are western style knives, it would be more reasonable to expect a double bevel in my opinion, although the description says it's only sharpened from one side on those too.

Good knives but not single bevel

First, the handle feels like it's made of hollow plastic, which makes it pretty light. This means that for dicing "tough" (relative to sushi) pieces of poultry/meats such as chicken breast, I have to apply a lot of pressure and long strokes to slice the meat all the way through. This eventually gets pretty tiring for the hand. A heavier handle would give the knife better balance and let the knife do more of the work

 With a chef's knife, I can angle it downward toward the food and use the weight of my arm to rock the blade and slice food very easily. On this knife, the blade angle is mostly parallel with the handle, meaning that my wrist has to do most of the work to apply pressure and I have to use long strokes to slice. This knife's thin and straight handle gets uncomfortable under this pressure after awhile because it's not very ergonomically shaped – unless you have really small hands, maybe. If the handle had a more natural/ergonomic fit with the hand, I'd give this knife more stars

Great for slicing sushi, but only OK for dicing lots of chicken

  Don't buy if you need a meat cleaver (this is way too thin), are looking for a fancy knife (get something handmade or a Wusthof or a Mac or hell, a Shun), or are looking for a single-beveled Usuba knife (this is not that kind of knife)  I can't speak to the other kinds of knives Wasabi sells because I don't own them. But they're probably also..

 Will need to be sharpened if it's going to serve its primary purpose as a vegetable knife. Otherwise, perfectly fine. Will get the job done and given a good couple hundred strokes on a whetstone, will probably fly through onions and tomatoes and sweet potatoes.  Buy if you cut a whole lot of onions and whatnot and you don't need to rock chock herbs or do much of anything with meat and you also don't like spending money and you know how to sharpen and maintain a knife

Made by the same company, but not a Shun. Remains to be seen how the edge holds up. Adequate knife for your home kitchen, but you could find so many knives that are better at this price. I do not recommend this as a knife for commercial kitchen work

This is a solid knife, however, the handle is made of cheap plastic which makes the whole product feel cheap.

Sharp knife but lackluster quality

PLEASE be aware that this is a Japanese single-bevel knife, meaning the cutting edge is not a 50/50 "V-shape". It is ground ONLY on one side at 15º. If you run this knife through a regular knife sharpener you will dull and basically end up destroying the knife. You must use a stone by hand or another type of sharpener that will hold the knife at the correct angle on the correct side
