I’d say the covert hoody. It’s an overkill due to its thickness and lack of wind protection. For me, Delta LT is warm enough when there is no wind, otherwise I’ll go for Gamma series.

Delta LT is a good active layering fleece, but I still think patagonia nailed this category a bit better with the r1. These are both fleeces I reach for when Im doing high output activity, so I'm not sure they perfectly fit your use case. I realize the insanity of me saying this on the arc sub, but for moderate output general use in winter without a hood, I almost always reach for my decathalon grid fleece. Its 20 bucks, usually on sale for 10, trim fit and made well enough.
