The Truck Guy

 . . the spring for the blade advance setting lock is very weak so it is hard to tell were the notches are. It takes a knack and practice to even find one consistently and it is not quick

 * It rattles a lot * Three blade settings with a slight extension on the forth but that is to remove the blade using the side blade release button.  The "Pro-Grade" * It is a very substantial box knife * It is "defend your castle from invaders" substantial (if it is a small castle and there are only half a dozen invaders ). * As you can see from the photo it is way larger. If you are wearing gloves and can't hang onto a smaller box knife the Pro is made with you in mind

Hard to improve on this

 so if you don't like fiddling with the knife, this is probably not the knife for you. But every time you want to access that blade storage while I've got it open here guys, you're gonna have to unscrew this knife and you're gonna have to reset your retractable button and make sure it's all lined up. But once it is, go ahead and put your screw back in, get your knife closed up, and then you've got your retractable knife and you've got a few different positions as you retract the knife up and down that you can lock into. If you want to get up to that top position, just hold the the button down, slide it up and back, and if you've got extra blades in there, you're gonna be able to hear them in this knife

 so I would opt for that position. But once you've got your knife positioned properly, pop the cover back on and then get the knife screwed shut. and once you've got your, you're screwing there tightly. This is your knife guys

 and let's go ahead and get this knife open. see if we got the screw out far enough. We'll get the packaging off the Stanley Classic 99 retractable knife. Get that open, Get the packaging off

This petty knife felt and performed almost exactly like our winner—perhaps not surprisingly, since they share most of the same specs. Just as agile and nearly as sharp, it made quick work of every task, and felt great in our hands as well. Like our winner, its handle can be a little slick when wet.

When I use a petty knife at work its going to either be used during a busy service or in some capacity where I don't care what happens to it. It's the disposable knife. Given that this knife holds an acceptable edge and is priced reasonably enough for that purpose for me. I wouldn't recommend it for home use as the handle has imperfections and there are several spots on the blade that required polishing to get rough edges, such as the spine of the blade

 It fits my needs and would recommend it in the disposable capacity but not as much else. I might just spend the extra money for a Misono petty next time just for the better handle.

Acceptable

 They are replacing a Victorinox Chef’s Knife and a Victorinox Boning Knife.  Both Tojiro knives are the sharpest knives straight out of the box that I have ever seen, and both are capable of making thin cuts. I make beef sandwiches from medium rare New York Strip steaks and beef jerky from eye of the round. I make deli style paper thin cuts on both the New York strips and ripe tomatoes for the sandwiches

 In time I edit this post with the results.  These knives will need honing and sharpening at some point in time. It is imperative to keep the bevel on each side at 15 degrees. That requirement leaves very few options for which tools can get the job done

 Tojiro DP knives has solved that problem for me. I’ve only had these knives for a short time, and only time will tell if they stay sharp for a long time as I expect. In time I edit this post with the results.  These knives will need honing and sharpening at some point in time

Great Knives

Like the other Tojiro DP kitchen knives we own, this one is superb--especially considering the price point. If I could go back in time to the Early Quaternary Period and change our wedding registry to get rid of all the German kitchen knives we own from Wusthof and Henckels that cost our friends and relations twice as much but are made of Swiss Army Knife steel that stays sharp just long enough to slice about two tomatoes, I would do so gladly. Don't make our mistake! Get the Tojiro instead!  Seriously, these are great--nice cutting geometry, and the VG10 steel retains an edge well and (rarely) rolls rather than chips if it runs into a problem like an unexpected bone--great for a kitchen application where a honing steel is right on the counter. Corrosion resistance is great as long as you keep them out of the dishwasher (though ours have been through it a few times with no negative results other than an argument or two about WHO PUT THIS IN HERE?!?!?!)

Seriously, these are great--nice cutting geometry, and the VG10 steel retains an edge well and (rarely) rolls rather than chips if it runs into a problem like an unexpected bone--great for a kitchen application where a honing steel is right on the counter. Tojiro does it again--outstanding performance for great value

This is my first "decent' knife and it is awesome! I'm a very small person and I think any bigger and the knife would have felt too large and unnatural in my hand. It's really sharp and has a great medium weight to it. It feels really solid. I've never really been into kitchen knives before, but my current one was just an ordinary cheap paring knife and this Tojira knife has made cutting vegetables a more enjoyable task

 Not a little bit small. Smaller than a paring knife handle should be small. I have no idea who they were designing this handle for, and there's absolutely no consideration of people with anything but very small hands. Missing the target by so much means a 2-star reduction and I returned the item

Handle is comically small. Otherwise a pretty good petty knife.

 I also like the shape of the handle over the oval shape of some Japanese knives with smaller handles.
