I haven't had that sensation with a steak knife even in the good steak restaurants. I picked a non-serrated blade because in researching knives, some prefer not tearing the meat which even the sharpest serrated knives will do

 These weren't the most expensive and definitely not the cheapest but these will be our knives for many years so - good investment. You won't need any more steak knives if you get these. (side note - I keep these away from our daily knives so they are only used for meals with meat because I don't want to think about sharpening them soon.

Wow - ok - these ARE sharp!

I've owned Shun steak knives for over a decade. Attractive and stay sharp. Not as nice as the earlier ones that came in a wooden box, but far superior to most steak knives on the market. My go-to knife for meats

The blades of this Victorinox Redwood steak knife set are incredibly sharp, thin, and impressive. This knife set is only held back by mediocre dark Walnut appearing Redwood handles (don't see any red in them) with an equally mediocre dull finish (they do not remotely appear like the picture shown in this advertisement). Although adequate, the handles could have used a little finer sanding and several coats instead of one of the oil stain from the factory. You want to avoid using mineral oil as it will make the handles appear black (unless you like that)

 The finish is adequate at best.  The photo provided in this advertisement erroneously makes the Victorinox steak knives look like I wish they actually did. Instead, the finish is more like the Victorinox serrated knife set that I show in the first photo below (without the good grain). Look elsewhere if you want high quality knives with high quality wooden handles

Excellent Sharp Quality Blades,  So-So Handles

I am a big knife guy. I love nice, hard knives. I treat my knives well.  But steak knives such as these are often used directly on plates (not cutting boards) and tend to dull or chip quickly, so I wanted something that was functional, classy, and easy to work on without being too expensive (I'm NOT using my 63 HRC blue steel forged knives on stoneware plates)

It makes me feel like if I were to run my hand in the wrong direction on the handle that it would give me a nasty splinter. So far no issue with that, but I wish the handles were smoother or more polished

Great knife but weird handle

 It's a very lightweight and well designed knife. I didnt find it had as sharp of an edge that I would have expected for the price and reviews. I just had to pass them on a finishing stone to get them up to par. We cook and use our knives a lot and these replaced our Chicago Cutlery blades we have had for 17 years and had received as a wedding gift

 I dont think these will make it 17 years. While ideal for steak the edge profile is so thin soft items like butter stick to the sides. I have a little cheap Mercer pairing knife that has a thin blade also and butter wont stick to the sides of the blade like it does with these. Thinking it's just a lack of finishing oversight on their part
