You have to set your expectations correctly. These are not premium knives and it is wrong to judge them that way. These steak knives do their job pretty well. the blade is thin and will take a decent edge

Wow - ok - these ARE sharp!

I've owned Shun steak knives for over a decade. Attractive and stay sharp. Not as nice as the earlier ones that came in a wooden box, but far superior to most steak knives on the market. My go-to knife for meats
