We don't have too many complaints about this chef knife, but we will note that the handle was a bit small for our larger-handed testers.  I left mine at work for about 4 days whilst I was gone, and the head chef (who readily agrees it is the sharpest knife in the kitchen) used it heavily, disregarding his wuhstof collection. I came back and he had not honed the edge, so it had deteriorated well beyond repair to its original condition.   To be considered a 'good' knife it should: -Be correctly balanced - Have a full tang (or something similar). NOT bonded. - Have metal that can be sharpened to the point where it shaves arm-hair. - Retain its edge assuming regular knife-steel use

 I have actually grown to prefer the weight of the G-2. After a TON of vegetable chopping, the light weight of the G-2 is a godsend.  The steel is not obnoxiously hard (HRC) unlike some other japanese knives, so any decent steel will do wonders on it.  In conclusion, this is hands down the best general Chef's knife I have ever owned

 They use the stamping technique in order to make the knife much lighter. There's a forged version (the GF-33) but it's heavier and has a solid handle. I have actually grown to prefer the weight of the G-2. After a TON of vegetable chopping, the light weight of the G-2 is a godsend

Absolute Perfection in a Knife

 It shouldn't interfere with cooking at all. It's probably safer if anything because you can't really stab yourself or cause any accidental harm when you are cleaning it.  Sharpness-It comes sharp and it stays sharp for a long time. But how it keeps its edge really depends on how well you maintain it

 However it's sharp so you can use it to get better control when peeling veggies so you don't have to switch to your paring knife for small jobs.  Lightweight-Much lighter than traditional chef knives due to the design for the handle but it is still very well balanced. But if you're used to traditional knives, make sure you hold the Global at least once to get a feel for the weight before buying.  Point-The point is slightly rounded

It works impressively well for meat, nothing stands in its way; but the blade is somewhat convex in shape, so things stick to it a bit more and it takes a little more pressure to cut veggies etc. The knife feels as if it were made to suit a large powerful chef with big hands, so a definite feeling of overkill in moderate use. Very well made knife, top reviewed -- by comparison, I've been using a Sabatier chef's knife for nearly everything in the kitchen, and found it excellent for all-purpose use -- but it was stamped steel not forged, and eventually got metal fatigue and broke between handle and blade. Wonderful addition to the kitchen

 That is not what I received. The knife I received has an item number of 31021-200. When I search the item number on Zwilling web page it shows to be a Professional S "8 inch Chef's knife, Visual Imperfections. My take, it's probably a factory second

 The graphics on the knife received are not identical to the one on Zwilling's web site with the same number. What I received was a nice, sharp fully functional knife. Hope the quality and durability are what i expect. I'll send an email to Zwilling and see what they have to say

 The high carbon stainless steel is really durable and you can tell when you're using it. The handle is easy to clean off and feel great in my hand as well.
