We don't have too many complaints about this chef knife, but we will note that the handle was a bit small for our larger-handed testers. This made it difficult to obtain significant amounts of leverage while trying to cut through tough squashes. However, the short handle might just make it a perfect choice for those with smaller hands looking for an eight-inch rockered blade. The Global 8" is a great all arounder at an affordable price, perfect for putting through the wringer of everyday use either at home or in a professional kitchen.

 I left mine at work for about 4 days whilst I was gone, and the head chef (who readily agrees it is the sharpest knife in the kitchen) used it heavily, disregarding his wuhstof collection. I came back and he had not honed the edge, so it had deteriorated well beyond repair to its original condition.   To be considered a 'good' knife it should: -Be correctly balanced - Have a full tang (or something similar). NOT bonded. - Have metal that can be sharpened to the point where it shaves arm-hair. - Retain its edge assuming regular knife-steel use

 I have actually grown to prefer the weight of the G-2. After a TON of vegetable chopping, the light weight of the G-2 is a godsend.  The steel is not obnoxiously hard (HRC) unlike some other japanese knives, so any decent steel will do wonders on it.  In conclusion, this is hands down the best general Chef's knife I have ever owned

 They use the stamping technique in order to make the knife much lighter. There's a forged version (the GF-33) but it's heavier and has a solid handle. I have actually grown to prefer the weight of the G-2. After a TON of vegetable chopping, the light weight of the G-2 is a godsend

Absolute Perfection in a Knife

 It shouldn't interfere with cooking at all. It's probably safer if anything because you can't really stab yourself or cause any accidental harm when you are cleaning it.  Sharpness-It comes sharp and it stays sharp for a long time. But how it keeps its edge really depends on how well you maintain it

 However it's sharp so you can use it to get better control when peeling veggies so you don't have to switch to your paring knife for small jobs.  Lightweight-Much lighter than traditional chef knives due to the design for the handle but it is still very well balanced. But if you're used to traditional knives, make sure you hold the Global at least once to get a feel for the weight before buying.  Point-The point is slightly rounded

 Uh all around nicely finished: let's see what it can do. I have a cucumber here, so let's go ahead right through no problem at all slice that right up for a salad, real nice, you know so there you go cucumber sliced up real nice like that. That worked very, very well. You can also, let's just cut a little bit more off of that i'll deal with that later and you can even go

 It has little protectors on the ends there, of course, i'll be taking that off. You can see that there is a laser etching on the blade there to make it look like damascus, steel. This is not damascus, that's kind of an old art that really isn't around anymore, but it's laser etched that way and that actually is going to help to prevent sticking of foods there. The blade itself is 5cr15 mov, german, stainless steel, it's 58 rockwell hardness and it has a 15 degree angle on the blade you know the beveled edges at 15 degrees

 You know down the side if you want slices like that cuts very nicely, and we can kind of cube this up over here there you go nicely cubed up long slices and circles whatever you want to call them, so that worked very well. Here'S some celery, oh yeah, right through no problem, that's great right there and then, if you wanted to do, you know, sticks or something like that. We can cut these up like that, and there are some celery sticks as well. That cut right through no problem

Now some pepper jack cheese, so what i usually do is i just cut the wrapper like that and slice right through the plastic and everything without any problem, and then we'll just go right in here. Look at that slice that right open, no problem, we'll unwrap that there that did a fine job, no problem at all nice slices of that right there

PAUDIN 8" Chef's Knife Review

 They are rinsed after I use them and never run trough a dishwasher. The hardness is the reason for 3 stars instead of 4. I have a Leatherman knife. If you own one of these, you will know what I mean by good hard steel that really holds an edge

This is a good chef knife for the money. It replaces a old non stainless steel chef knife that I've had for 25 years. The old knife stains anytime I cut anything acidic like a lemon and don't rinse it. The stainless on this is much better

Good knife for the money

 Good stainless steel does not rust. I have good stainless steel knives that I bought either in the late 70's or early 80's and I let them drip dry after washing. After all these years, not one spec of rust. I should have realized that I wasn't getting high grade stainless steel because of the price but they will do for now unless they start to rust after drying them

It's ok for short term

 The handle is nothing superb, but I like the fit and feel. However, there is no finger guard on the bolster, which increases the possibility of sliced fingers.  But mostly I'm not fond of the weight and balance of this knife. It's light and front-heavy

A Decent, but Frustrating Knife

 It's showing near ZERO wear, and just keeps cutting! The handle is still beautiful, and overall well balanced and offers great control. I can hardly believe how tough this thing is at this price point. Will definitely be picking up a couple more in other styles.

We've beat up on this thing for two years now, every single day. The blade gets raked through a drag style sharpener MAYBE once a month, and yet it remains plenty sharp enough for safe use on any food. It's showing near ZERO wear, and just keeps cutting!  Upon further research, I discovered that 5Cr15Mov is a low-end Chinese stainless steel, and is *nothing* close to the famous German X50CrMoV15 steel.  All in all, fake advertising. Inferior product sold at a semi-premium price.

This is not a high-end knife, and is worth no more than a $10 you can buy from Walmart. Upon receiving the knife (Sold by Paudin Store, Ships from Amazon), I noticed that the finish on the back of the knife is very rough, and the steel feels very soft (the knife flex way more than the old Victorinox knife I'm replacing). Upon further research, I discovered that 5Cr15Mov is a low-end Chinese stainless steel, and is *nothing* close to the famous German X50CrMoV15 steel.  All in all, fake advertising
