The Fletchers' Mill grinder is easy to fill with a funnel but has the smallest peppercorn capacity of our test bunch, so in a high-use kitchen, it will need more frequent refills. According to the manufacturer, its locking nut grind adjuster has 33 different grind sizes. We were not able to discern 33 different grind sizes but could find a variety ranging from fine to coarse. However, we were disappointed in how easily the finely ground pepper clumped when it came out. Once the grind size was set to coarse, we found we could not just twist the locking nut back towards fine grind. To get back to a fine grind, we first needed to grind out the peppercorns in the grinding mechanism and twist the lock nut, repeating the process many times. It’s perfect and brings out the flavor!

 It’s wood but it’s been finished to the point that i thought it was plastic when i first picked it up. The color of the stain is off as well. I ordered the walnut but what i got had an almost pinky tone to it. I held it up to something Id stained walnut & it’s not even close

Doesn't grind salt well

I am completely delighted in this pepper grinder. The weight is perfect - not so heavy I feel uncomfortable going sizeable amounts of grinding, not so light it feels cheap. The color is gorgeous, and you can really see the wood grains. The screw on the top does click into each position, so when refilling, you really just have to count how many clicks for your desired size grind, I have no problem with this

  I'm also very pleased that this grinder doesn't leave the dreaded "fairy ring" of pepper when you set it down. The grinding gears are tight enough that one solid shake against your hand when you're doing grinding is enough to clear the looser powder from the mechanism, and I don't find pepper on my counters afterwards.  Excellent design!  My only complaint is how easy it was to overfill, as I wasn't able to readily see any kind of max-fill line in the grinder. Underfilling a little and doing it more frequently is definitely worth it, and not enough for me to dock a star

There are many benefits to freshly grinding pepper, salt, herbs and spices for cooking and seasoning. FINE OR COARSE GRIND-IS IT JUST A QUESTION OF TASTE?
Actually it depends on personal taste and the dish being prepared. A finer grind will be used for a delicate sauce or mixed raw vegetables and a coarse grind for grilling a steak or when making heartier meats and dishes.

Pepper: 

To get the best results, we recommend you to use only dry, hard, whole peppercorns that are 5 mm (1/4") or less in diameter. Black, white and dry green peppercorns can be ground in Peugeot pepper mills. Pink peppercorns can be ground only if in a blend (max 15% pink) with one of these other peppercorns. Dried coriander seeds are also suitable for the pepper mechanism. 

Salt: 

To get the best out of your Peugeot salt grinding mechanism, you should use: dry salt, ideally with a diameter of 4 mm (0.16") such as coarse sea salt or rock salt (salt mined from an underground salt seam). Do not use your Peugeot salt mill for grinding pepper or any other spice, or damp sea salt (also known as grey salt, Guerande, Re, etc.) The moisture content is so high in damp salt that it will corrode the mill. Use a Peugeot Wet Salt mill with a mechanism specifically designed for damp salt. Its shape and materials have been designed to resist salt corrosion.

The Peugeot Paris u'Select won over our testers with its consistent grind, ease of use, and quality construction. Like many pepper mills, this one requires a funnel to fill. We used a coffee filter shaped like a cone that allowed the peppercorns to fall into the center shaft, which holds 1.2 ounces of peppercorns. 
The Peugeot Paris u'Select was the only pepper mill we tested that featured a two-stage grinding mechanism. The case hardened steel grinding mechanism first breaks open the peppercorns and then uniformly grinds it producing a super consistent grind each time. The grind size selector is on the base and simply requires a twist, and we found selecting the grind size to be easy with both dry and wet hands. On each half rotation, the pepper mill dispensed a fraction of a teaspoon of pepper, allowing the user to control the amount of pepper being added. Our testers also appreciated the minimal pepper residue left behind after use, giving them less of a mess to clean up. If you're looking for a well-constructed, easy-to-use pepper mill with a consistent grind size, look no further than the Paris u'Select. 

Best for Most

You crank it, you get pepper. It puts out a fair bit of pepper, so watch your aim or you may pepper your counter along with your dish. The mill itself seems to be hardy and holds more peppercorns than I thought it would. Thumbs up!

Works as expected.

I've had a number of modern, acrylic, pepper grinders from reputable companies. The grinding mechanisms all fail in some time span between immediately and much too soon.  This Peugeot, while only in my possession for a couple of weeks, does a terrific job with fine to medium grinds and feels like it will last. The mechanism is very smooth in operation
