Fallkniven K2 Santoku  - Intro and Demo (Amazing Slicer)

 And this Fallkniven 7 inch Santoku is the best I have owned and probably the end of the line for me (and I have owned a few): the steel is tops (VG-10), it is laminated, the blade is thin, the handle ergonomic. And you can sharpen this very easily to arm-hair shaving sharpness.  it is a joy to use. slicing and chopping - a very universal knife, joy to use knife

 as an ambitioned amateur cook this is the knife i find myself using the most - very accurate and also very usable for bigger sloppier jobs. keep the edge sharp -on occasion, it is a very hard steel and doesn't dull quickly- and it makes short work of anything you throw at it.  i still think there are no premium brands out there that make *bad* knives (i own Globals and Henckels and Shuns, and like them a lot), but probably this is my favorite knife, the one i would never part with in my kitchen.  my sharpening routine does include leather strops and stones, but this knife can be kept suitably ueber-sharp with the Minosharp three-round stone water design

Understated yet GREAT knife

 The spider has just a couple of little sharper edges that I feel, like I notice a bit more just the slight bit of grab there on that really sharp tip they're. Almost a bit of a point. You can sort of almost cut yourself on it and I found myself catching it on the TTL when I wiped it down before, and the Quarian of the handle has, I think, just through general Heath and whatnot just formed a little bit of a roughness down here, Which I probably just it, doesn't really affect. The young then used to the knife, but it's just something I noticed from time to time

 The cladding still seems to scuff up pretty easily and probably a combination with the the green scour pads that sometimes get used on this as well has caused the surface to be exposed, probably a little bit more to rust. So those probably why I've had some little orange rust spots form on it, but they've all easily come off when I've treated it with edci or wd-40. If it's a little bit deeper that and a rough tea towel has gotten pretty much all the rust out of it. That'S ever had so there's that, and it's a really good performing blade

 The handle tapers back just slowly forming a slight hook. You know just to keep the hand in place without keeping you locked in, like a as if you're wearing some trench, knuckles or anything like that. There is a hanging hook or a lightning out hole. I guess you could call it, but I guess you could just hang this from all sorts of hooks on your kitchen or whatever, where we just keep this on the dish

 Okay, it's a flat ground, even though both the vg10, the Falcon even has laminated vg10. So there's a lamination line there. So everything below this line here is vg10 and everything above it well on the outside, anyway, is a softer stainless steel, like a 400 series stainless. So that's designed to make the knife you know a bit more resistant to lateral, stresses and also a little bit more rust resistant

 You know in every respect and really a great price point really for the quality of the steel. Now, there's a couple of choices with the f1 cos you can have a zytel, or this case i'm just showing here the leather sheath, which is a cavalry style. You know flap over sheath, you know fairly simple, but good quality, reliable and uh or you can get the zeitel shoes which i've shown you you do get with the option with the hk9 have done a sheath which they don't. I don't think they do in any of the other range uh very nice

 So it's going to be an excellent edge holder and, of course, you know the reason they selected that still because of this, when you're field dressing, it's exactly what you need convicts grind: excellent excellent cutting edges. Has nice stainless steel finger guard there too? So a really nice knife here, luxury high end high price, but quality through and through very very nice knife um. The f1 cos, i would say, actually is the practical choice. If you want a really high-end blade, steel and a very practical time-tested design, probably the f1 cos is almost unbeatable

 You know if you're looking for a really sort of high-end luxurious lifetime quality knife - you know the hk9 is a very good investment. I would say: um steel is, of course, the laminate 3g steel, absolutely outstanding steel, of course, stainless laminated, very high torsional strength, very fine steel and edge holding about 62 hrc. So it's going to be an excellent edge holder and, of course, you know the reason they selected that still because of this, when you're field dressing, it's exactly what you need convicts grind: excellent excellent cutting edges. We don't have too many complaints about this chef knife, but we will note that the handle was a bit small for our larger-handed testers.  I left mine at work for about 4 days whilst I was gone, and the head chef (who readily agrees it is the sharpest knife in the kitchen) used it heavily, disregarding his wuhstof collection. I came back and he had not honed the edge, so it had deteriorated well beyond repair to its original condition.  I have actually grown to prefer the weight of the G-2. After a TON of vegetable chopping, the light weight of the G-2 is a godsend.  The steel is not obnoxiously hard (HRC) unlike some other japanese knives, so any decent steel will do wonders on it.  In conclusion, this is hands down the best general Chef's knife I have ever owned

 - Have metal that can be sharpened to the point where it shaves arm-hair. - Retain its edge assuming regular knife-steel use. - Not stain (only applies to stainless steel knives)  The Global G-2 easily exceeds these standards. It's a 'good' knife

 They use the stamping technique in order to make the knife much lighter. There's a forged version (the GF-33) but it's heavier and has a solid handle. I have actually grown to prefer the weight of the G-2. After a TON of vegetable chopping, the light weight of the G-2 is a godsend

Absolute Perfection in a Knife

 It shouldn't interfere with cooking at all. It's probably safer if anything because you can't really stab yourself or cause any accidental harm when you are cleaning it.  Sharpness-It comes sharp and it stays sharp for a long time. But how it keeps its edge really depends on how well you maintain it

 However it's sharp so you can use it to get better control when peeling veggies so you don't have to switch to your paring knife for small jobs.  Lightweight-Much lighter than traditional chef knives due to the design for the handle but it is still very well balanced. But if you're used to traditional knives, make sure you hold the Global at least once to get a feel for the weight before buying.  Point-The point is slightly rounded

  Sharpness-It comes sharp and it stays sharp for a long time. But how it keeps its edge really depends on how well you maintain it.
