 This is great for steaming, dumplings or the other thing that's great. For too is you can be cooking something in the bottom and steaming something in the top. So, if you're making something like rice, which is automatically gon na make steam, you can miss Brock aaliyan shrimp in the top or something else that you prefer.   Cuisinart also has the model 626-32H Chef's Classic Nonstick Hard-Anodized 12-1/2-Inch with a Teflon like (PTFE based) surface, but without PFOA. Given that PTFE is emitted, and PFOA doesn't leave the body, and both are either pollutants or suspected carcinogens, why use a petroleum/chemical based surface with your food ?  What this says is that ceramic non-stick is not "buy, use & forget" like today's no-frost freezers -- manufacturers don't seem to be helping with addressing "stickiness" (just like washer manufacturer's deny the smell & mold of front loaders - for that & other HE washers, one poster say run a load w/ 1-2 dishwashing detergent pellets which do the same thing as the $1 washer cleaner pellets.  My sample has a dent on the metal wrap of the glass lid. It appears to be a factory dent because the lid itself was well wrapped in cardboard & paper, and the entire box was shipped by Amazon in an outside box w/ paper (Amazon is not only a great retailer, but a fantastic shipper -- always something outside the actual retail box)

Non-Stick Surface - Less Toxic than Teflon (PTFE) Based Non-Stick

 The pots have a nice look about them, and they clean up really easily. The weight doesn't feel cheap and they seem to have very good heat distribution qualities. I would have liked to have clear, glass lids to be able to see inside of the pots when the lids are on while cooking. The included lids are solid steel and they fit on the pots not inside, and the lid edges don't fit tightly inside of the edge of the pots

 The non-stick property works quite well and has held up as good as the first day we received them. This cookware gets a lot of daily use and it has held up well. With the limited availability of non-PFOA or Teflon coated cookware, these are a great value for the price.  I really like this cookware, having been a Calphalon user for years they are a really good option for a healthier product

Description is wrong - lids are not glass.

 Nothing actually sticks to the pan - you can wipe it down and it will be perfectly clean - but some things won't miraculously slide off as you see in some commercials. A grilled cheese sandwich will. An omelette won't, although it is easy to push it off with a spatula.  The biggest benefit, besides cleanup, is that the pan does not absorb flavors like cast iron

I use cast iron, stainless, sometimes carbon steel (a big wok). Occasionally porcelain. NO Teflon, thank you. I wanted a decent non-stick skillet, so I gave this a try after some research

  What makes ceramic 'non-stick' is a combination of a smooth surface, and less 'stickiness.' Teflon works because it has almost no stickiness, and it doesn't need to be that smooth - that's why Teflon pans can look somewhat rough. So this pan behaves a bit differently than Teflon. A fried egg will slide off easily if pushed, but tend to stick due to suction to the slick surface

 Preheat the pan a few minutes before cooking. Helps that my wife's father was a chef and owned a restaurant in FL. I never realized I was ruining pans by using too high a heat for cooking. C'est la vie

Well, despite all the fairly negative reviews posted lately, we've had quite the opposite experience with our set. The pans have been a joy to use, easy to clean and very easy with which to cook. We have experienced no flaking or any other defects in the non-stick coating. The anodizing of the outside of the pans has discolored on the bottom

9 months ownership and still look and perform like new....excellent!

 I should also mention how nice of a size this pan is. I cook full skillet meals in this pan and I love that when I stir the food is not falling from the sides. It is heavier than some other pans, so if you have carpal tunnel or arthritis or something like that, that could be an issue, but regardless, I think most people will really love this pan.

 For so many years, I used a Farberware large sauté pan or my husband had some old T-Fal that I used, and it still makes me sick to think about what we were exposing ourselves and our children to with that cookware. I love that this line is PTFE and PFOA free. I should also mention how nice of a size this pan is.  I liked that pan so much, I was happy to see they had the 5 1/2 qt sauté pan. I use this pan almost everyday to cook. If you follow the instructions, I think you will be pleasantly surprised. I did "season" the pan when I first got it

The bolted-on steel handle is quite good at preventing heat transfer from the pan's cooking surface to a cook's hand, so a silicone sleeve is not as necessary for this pan.  That’s a couple flax seeds than need to be gotten out of there somehow! The lids need to be designed better. It would also be nice if they included one for the skillet, they make one and it sells separately for $25 (eye roll). I contacted Greenspan’s customer service and they just said to return them to Amazon. I hope someone at GP cares that these aren’t as good as they could be
