I had no luck in resolving this issue with Cold Steel so the knives have been banished to the garage as a "project" to someday put a wood handle on them. (yeah right, I just hate to throw them away!) I really like the blade but the handle material failed me.

I own a set of these knives and the handle material has "melted" off and is a mess! I had them for about 18 months before I noticed the problem starting on one of the knives. I thought it had been laid down on a hot surface or something but then the others started the same problem. The black part just comes apart and leaves a sticky residue on your hands!

 It's not an issue, just something to be aware of. A good grip is necessary as is treating your knives as the high end tools they are.

As with all the knives I have purchased from Cold Steel these are excellent for the price. I love a good steak and when a knife will just slide through your meal it just enhances the experience. These knives are razor sharp and what you expect a good steak knife to be. The textured handle is a bit aggressive and you need to make sure that the handle is cleaned well after use as tossing it on the plate or into leftover food when you are done tends to collect some debris

I haven't had that sensation with a steak knife even in the good steak restaurants. I picked a non-serrated blade because in researching knives, some prefer not tearing the meat which even the sharpest serrated knives will do

 These weren't the most expensive and definitely not the cheapest but these will be our knives for many years so - good investment. You won't need any more steak knives if you get these. (side note - I keep these away from our daily knives so they are only used for meals with meat because I don't want to think about sharpening them soon.

Wow - ok - these ARE sharp!

I've owned Shun steak knives for over a decade. Attractive and stay sharp. Not as nice as the earlier ones that came in a wooden box, but far superior to most steak knives on the market. My go-to knife for meats
