So let me show you the slow cooking features first. One of the things I love about this machine is that it actually has a saute sear function so you can brown off whatever you're cooking first and then put everything in and put it on slow cook

 You could definitely use red wine too if you prefer though and a sprig of thyme and then to thicken this braise I'm adding a little bit of cornstarch to some chicken stock. Whisk that in for a really nice texture to the braising liquid when you're done. In that goes and then I'll take the chicken that I've already browned and just put it in with the liquid, the shallots and the garlic. Okay so now that everything's in I'm just going you can see this little line right here I'm just gonna line it up and lock the lid into place because I'm not cooking under pressure with this you don't have to worry about anything else on the top

 And since I still had the previous one, which I was super happy with, I didn't want to change it until it broke. And then I didn't have any choice but to change slow cooker. And when I was on the market looking for new slow cooker, I decided to stick with the Sage brand because I really enjoyed the quality of the previous slow cooker and it lasted me for good six or seven years. But then I saw this slow cooker, this model, and I was like, maybe I should try it

 Also some new things in this model is that you can actually correct the cooking time. For example, in the previous model, the cooking time was always set, so if it's a low mode, then it would be 7 hours, if it's a high mode, then it would be around 4 hours. On this low cooker, you can adjust time according to your needs. So for example, when I cook stock, I increase cooking time for 8 hours instead of 7 hours

 So let's say, previous model had just a normal lid, which you could lift and close. This one, since it's a pressure cooker, it has to have special mechanism, which seals the pot. So let's say, as you can see, my drawers are quite long. And if my slow cooker stays under these drawers, it will be impossible to open it

 For the last two days, I have experimented with the cooking temperatures in my Fast Slow Pro and have arrived at the following conclusions: Using 2 quarts of water in the pot, The "high" setting on my unit sits right about 203 degrees and I would describe the water as being at a hard simmer. I was surprised to find the the "low" setting was only 3 or 4 degrees lower than "high", at approximately 198-199 degrees. Using the "keep warm" setting was the most interesting, and maybe the most useful for me, sitting at 162 degrees. I measured high, low and keep warm on two different days and kept the unit running for 4 hours at each temperature setting, with a cool off time before trying each new setting

Be aware of Slow Function temperatures.

Best Slow Cookers - GearLab

The brown function works great.  However, the slow cooker function does not heat the food up sufficiently.  I had a pot roast in on the low setting all night (about 12-14 hours) and it still was not completely cooked.  I switched to the high setting on slow cook and it still did not heat up equally to my inexpensive Crock Pot

 I knew to never use metal utensils in the pan, but because I only own wood or silicone utensils these days, it never occurred to me as a potential problem.  Unfortunately, here's what happened one night: family event, lots of people enjoying chili, and while I was outside socializing, well-meaning friends emptied the pan into leftover containers, rinsed and filled the pan with hot water and soap, and tossed in all of the used flatware (metal). During cleanup later that night (or was it the next morning ;-), I found two noticeable scratches in the bottom of the pan. Ok, I know that cooking/stirring with metal was not advised, but just tossing in forks/knives for soaking is enough to scratch this surface to pure shiny aluminum?  And the scratches to pure aluminum? I am not sure because I do not have access to a laboratory micrometer, but I am sure that I put my deodorant on thicker than the non-stick coating on this pan

 Heated more evenly, but the crock started showing stress cracks in the bottom within a few months. Finally, after three years, a move from the fridge with prepared food directly to the base unit (on low) shattered the crock. 2015 - Cuisinart MSC-600 3-In-1 Cook Central 6-Quart  I am so sad that the quality of the Original Crock Pots has diminished, but I am happy that I found my Cuisinart 3-in-1. We are no longer talking "crocks" here because it seems like current-standard stoneware is just not what it used to be, but I am satisfied with the all-over heating with this new cooker

Love It, Use It Often -- but easy to scratch the pan

 not a big deal, but you have to watch everything and confirm that youve in fact turned the cooker on and heard it start before walking away for the day.

 not sure if i would use this to steam vegetables -- microwave or quick dunk in boiling water to parboil might be less involved and faster. left one star off b/c of material and controls. 1. material -- im not too sure of the nonstick material the insert is made of -- its a weird teflon-like material that says its bpa free but in general i dont like cooking in this type of material (i prefer stainless steel, cast iron, or enamel, for health reasons)

 i'm very very happy with the quality of the food i've cooked so far (short ribs, turkey broth reduced down for thanksgiving gravy, and an indian red bean curry -- i plan to try pot roast this week, and steaming fish next week). i like this cuisinart model infinitely better and wish i had never bought the other 2. not sure if i would use this to steam vegetables -- microwave or quick dunk in boiling water to parboil might be less involved and faster. left one star off b/c of material and controls

very happy with its functionality

 Remember, any crock pot should only be filled to 2/3, not the top that is shown in all pictures on any box. We had started with a lot of veggies and potatoes and found we were already at 2/3 on this 3.5qt before we could even add the meat, so we switched to the 5qt. But then you do not want to always use a 5qt either, because you do not want too little in

 Realistically you will likely need both a 3.5 and 5 quart crock pots to select based on the size of the recipe. We still use this 3.5qt most for 2 of us, but have on occasion found it filled too quickly and switched over to the 5qt

 For the second meal shown in the video (pulled pork), it too cooked longer than needed the first time, and was better the second time when we checked the temperature earlier and confirmed done earlier. The best success we had with this was making pulled pork. Btw, I skipped showing the steps testing the meat temperature, adding the BBQ sauce, and using a fork to shred the pork.

  The construction and quality of this pot seem very good to us. The lid is standard thickness for crock pots, and there doesn't seem to be any need for it to be heavier while it is cooking. It does build up condensed water around the ring of the lid and bubbles out during cooking as it continually pushed out steam. The 4 settings seem to give you plenty of flexibility, but we use low for most, and the automatic switch to warming mode is nice
