 I have sent for a metal filter which, in theory, will not remove the acid. I like the slightly acid or citrus bite of fresh coffee. If this fulfills that ideal, this is five stars.

Well, the NZ was okay but certainly didn’t call for the earth to stop rotating but the coffee from the DF64 - prepared in the same AeroPress with the same recipe - was absolutely earthshaking. How can this be? I don’t know but that little pinheaded robot can make good coffee, even if doesn’t get to sit at the cool kids’ lunch table.

I have a MaraX paired with a Mignon XL and I came from a Gaggia Classic and a Vario. The MaraX has really improved my espresso. The temperature management, noise level, mechanical preinfusion, and over-all productivity and endurance of the MaraX is excellent. I can easily make back to back to back drinks for house guests, at a much faster pace than I could with the Gaggia, without the temperature surfing when varying between brew and stem temps

In the winter of 2019 my wife and I bought ourselves a Breville Duo-Temp Pro and a Bodum Bistro grinder thinking we would use it only a couple times a week. Then I got a new job in early 2020 where I now work predominantly from home and use the machine everyday. 

I want to upgrade the setup and already started by getting a new grinder, Eureka Mignon Specialita, but am needing a bit of direction on what type of espresso machine might fit our needs best. We make espresso and steam milk daily, but a separate times. My wife drinks cafe au laits in the morning (tea for me in the morning) and I have a double shot of espresso in the afternoon. So both good steaming ability (she is a former barista so is skilled at it) and good espresso making are important to us but we rarely do them at the same time. 

This leads me to question if a double boiler or HX machine would really be any benefit to us. Would a PID single boiler machine be enough for what we need?

Budget is around $1500, used/open box is more than ok maybe even preferred to stretch the budget, and want something reasonably compact. Initially was thinking of the lower cost double boilers (Lelit Elizabeth, Rancilio Silva Pro, etc) or HX machines (Lelit Mara X, Bezzera BZ10, etc) but again started to wonder if a single boiler would work for us.

What type of machine do I want: Single Boiler, Double Boiler, HX?

 From the finished brew. I found that : I get a silker mouthfeel. It will deliver a robust, bold, smooth, rich flavored coffee. Completely - without any trace of bitterness or harshness

 I used a fine grind of Seattle Best #5 which is my favorite. I use it in my moka pots and my espresso machine. Cons: price. It’s too expensive plain and simple

 This is what I consider necessary to making the perfect cup of coffee. If you use pre-ground beans from the supermarket, expect a pre-ground supermarket flavor.  3. Origin and type of beans

 Too fine, however, and you may not be able to push the water through as easily. The more course your beans though, the easier it will be to push the coffee through, and the more "consistent" the flavor will be. Despite however finely or coursely-ground you like your coffee, be sure to use FRESH BEANS beforehand. By fresh, I mean maybe a day to a month-old whole beans, and grind them on-the-spot prior to brewing your cup

 Either brush your teeth and your tongue, or sip on some gulps of water, or try chewing some lightly flavored gum beforehand to cleanse your palate.  After these two things, the way you make your cup using the Aeropress is entirely up to you. I highly encourage you to experiment and to constantly try new things. This is the most versatile and open-to-experimentation coffee brewing method there is on the market

 Also, the type of filter you use. I find that the steel or metal filters absorb less oils, meaning your cup of coffee will have a stronger "punch" to it, as opposed to the white-filters included with your Aeropress, which do a great job at eliminating dust particles and unwanted grounds, but also eliminate the oily-goodness of what is good coffee.

Some things to keep in mind.

This thing is so small and perfect for my mochas. I was tired of wasting money at Starbucks or McDonald's on Iced mochas. So I thought of investing in this and I am so glad. Super fast and easy to use
