If you are shopping on a budget and don't mind a fairly bare-bones option, we strongly recommend considering the Wancle Thermal Immersion Circulator. This machine usually retails for quite a bit less than the top models, and we found that you can make some absolutely delicious meals with it. Its circulation pump performed impressively well in our tests, and it's pretty easy to use once you become accustomed to the interface. 
However, this unit doesn't include any smart features or other ways to monitor it remotely. It's also on the larger side, making it more cumbersome to store. The spring clamp works for most containers without issue, but you might have some problems if the vessel has thick walls or a larger lip. It also wasn't the most impressive in regards to temperature accuracy. Overall, we found that Wancle's value far outweighs its flaws and think it's a great option for anyone with limited funds looking to get into sous vide.

Any recs for a well made, analog SV wand? Don't need or want app connectivity, or even digital controls. As long as it can keep the temp somewhat accurate and ideally have a timer (even that's not necessary), I'm happy. Prefer to keep it around the $200 mark.

Simple, quality SV cookers

Easy to use, temperature accuracy questionable

 Apparently it's 109 F, and those 40 degrees happened very quickly. The device says it gets hot in like 15 minutes or something, but honestly I don't think it took anywhere near that long. It got hot fast, and produced a pretty solid stream of water that really moved the stuff in the pot. I need a bigger pot, as the one I was using was barely large enough to accommodate this thing

 If you're gonna have it set to tenths of a degree, it dang well better be good at maintaining that temp, otherwise it's really just a gimmick. Don't think you're going to get that exact, precise, to-the-tenth-of-a-degree temperature the whole time. It's just not gonna happen.

Clip on is not super great. Flow and temperature are above expectations.

Suggestion for someone considering buying this: I attached it to a stainless steel pan, but I’ve read that a rectangular plastic container (preferably with a fitted top) is much better (because it’s both roomier and more energy-efficient); search on sous vide containers that fit a Wancle. Now I’m trying to decide if I should buy an Instant Pot or an air fryer.

 Durability. After 5 or 6 weeks of normal use, the motor began emitting a loud rattling noise whenever turned on. I may have simply received a lemon, but this issue is worth noting regardless.  Bottom line:  This product generally performs well, but given the design flaws and durability issues, I wouldn't give it first recommendation

Flawed, but mostly solid product.

 I wanted even cooking and I got it. Temp control is great even with this much water (probably 3.5 gal), I've cooked chicken, pork roast, pot roast, steak and ribs and they all come out just like the recipe photos. The only down side is the functionality of the timer/shutoff

This is my standard experience with Amazon prime products.  The new unit has yet to break over the last month. I've probably used the replacement unit for ~36 hours with no issues
