Need help picking all mountain skis for the East Coast
I think if you're sticking mostly on piste and are a confident intermediate the 85-90mm should work well for you. The Nordica Enforcer 88 is a classic that I think would be a good choice. The Volkl Kendo 88 and Deacon 94 are a bit stronger/more demanding skis that you may find a bit punishing, but offer great carving performance if you're confident driving the front of your skis.

Looking for an 80-90mm ski to complete my quiver
Kanjo could work especially if you don’t size up, but I think the sick day 88 would be a better option as would an Elan Ripstick 88 or maybe a Nordica Navigator 85 or an Armada Declivity 88c. Those are really forgiving skis that won’t take you for a ride when you get backseat in the bumps. Most of the narrower skis have a tail that’s too locked in for bumps.

Buying my first pair of skis.
It has some metal underfoot to help with vibration damping and stability but it has lots of pop and playfulness and will be fun for you when you want to explore off piste. As others have mentioned, the Ripstick 88 or 96 would also work, which uses carbon rods instead of metal to achieve a similar effect. For a more piste-oriented option with some off-piste capability, the best skis I can think of are the Elan Wingman 86 CTi or Ti (CTI has carbon and metal, Ti just metal), the Nordica Navigator 85 CA (just carbon, no metal), and the Volkl Kanjo (no carbon or metal, just fibreglass laminate with wood).
