I've concluded that **Nordica Navigator 80s** are the ideal ski for me, but they are infinitely out of stock everywhere. Is this as good a choice as I think it is?. Where can I find them 172 or 179cm (I am 6'5" 230lb, but I size down some, I've only found 165cm and smaller)?.

Ski recommendations for Intermediate (again - sorry)
However, judging by your description and the fact that you don't often venture off trail, I'd suggest something on the mid-80s. The Dynastar M-Pro 85, Salomon Stance 84, K2 Mindbender 85, Nordica Navigator 85, Volkl Kanjo, Atomic Maverick 86C, and Armada Declivity 88C would all be great for you. ("C" stands for carbon, which means those skis are similar to the metal versions with "Ti" titanal in them but much easier to ski and more forgiving).

Looking for an 80-90mm ski to complete my quiver
Kanjo could work especially if you don’t size up, but I think the sick day 88 would be a better option as would an Elan Ripstick 88 or maybe a Nordica Navigator 85 or an Armada Declivity 88c. Those are really forgiving skis that won’t take you for a ride when you get backseat in the bumps. Most of the narrower skis have a tail that’s too locked in for bumps. There seems to be some confusion about bumps and trees.

Buying my first pair of skis.
It has some metal underfoot to help with vibration damping and stability but it has lots of pop and playfulness and will be fun for you when you want to explore off piste. As others have mentioned, the Ripstick 88 or 96 would also work, which uses carbon rods instead of metal to achieve a similar effect. For a more piste-oriented option with some off-piste capability, the best skis I can think of are the Elan Wingman 86 CTi or Ti (CTI has carbon and metal, Ti just metal), the Nordica Navigator 85 CA (just carbon, no metal), and the Volkl Kanjo (no carbon or metal, just fibreglass laminate with wood).
