Suggestions for 1 ski quiver for Utah, CO, Can Rockies
In this category of somewhat fat, bump/tree skis that still perform well enough on piste you also have the Moment Wildcat (more free ride oriented), Fisher Ranger FR, Armada Declivity, Bent Chet, Line Sick day. Stick with a waist width less then 108 unless you’re powder hunting but it sounds like you’re not doing that. The kendo’s are a little stiffer and more damp so switching to an all wood / wood and carbon ski is going to take some getting used to. But for skiing out west that’s the construction you would generally want for bumps and trees.

Trying to decide between the meridian 107 (full rocker) and wildcat 108 (mustache rocker) for a touring setup. Opinions?
I'm happy with it's float in most conditions, but it obviously won't float as well as something over 115. Wildcat 108 is going to be a little more stable and consistent in hard conditions or crappy crud, will float fairly comparable to the Meridian and will give more confidence on steep or icy terrain. Quite a few people are hesitant to go full rocker for backcountry only, I feel it grips better on the skin track and I personally haven't found any situations in which I would *really* like a cambered ski for the uphill.

I currently have a pair of Moment Wildcat Tour 108s mounted with Shifts. I hate the bindings so much that it definitely rubs off on the skis, but I'd rather sell them as a set than remount the Wildcats since I don't love the skis either. The Wildcats are great in soft and variable snow, skin well, and give me tons of confidence in the air. However, I HATE the way they ski hardpack.

What skis should I bring with me to Alta-Bird?
If you are going to be living there for three months, get some powder skis. You might be able to find some out there used and cheap. Or just sell some of your skis and buy something else. Moment Wildcat or something like that. 116/118 mm waist.
