 The beeswax coating needs wet and heat to remove. However you want to accomplish this seems fine, either on the stove or with a boiling kettle, but this stuff was not a breeze to remove. Hot, wet, soap, and a light scouring pad got the job done for me, with no little elbow grease. There are a lot of people second guessing whether or not this is actually beeswax, but you can smell that its wax when you heat it

 Second dish was omelettes this morning. The pan was perfect. The omelette slid around exactly as it had in our teflon pans with no more butter than I would've used before (1/3 tbsp?).  I had my doubts, and almost returned the pan a few times along the way, but in the end this pan was great

 I look at it as the price I'm paying to not worry about teflon (and to be able to throw the pan in the oven when it suits me). I find myself almost always using a potholder to handle the pan, because the handle itself is uncomfortable to hold. I still like using it for most things. It sears meat really well, and handles all of my one-pan meals

First off, after reading the many reviews about how this pan is not as big as advertised I thought I would need the 17" to get the size I wanted. Big mistake. The outer diameter on that unit is huge. It took up half my stove top space overlapping two burners

 It is heavy, with lots of iron in the construction so it needs two handles.  So why does it get 4 stars? Because it does what it says. It is a healthy alternative for those of us who want a non-stick pan without the toxins found in non-stick coatings (don't be fooled by claims of safety. they all say that)

 Cast iron is practically indestructible on the stove or on a fire.  VERSATILITY - 3 stars - I use this pan the most because its meets my cooking trends and personality, however I believes its the least versatile or tied for last with the non-stick. I find my ALL Clad stainless the most versatile and if I could have only one pan, a 12 in All Clad stainless even though I use mine less than this carbon steel pan.  VALUE - 4 stars - a really good pan at a logical and decent price

 I have Lodge cast iron in three sizes and a ceramic coated dutch oven, I have All Clad stainless in various sizes. I have non stick from Kirkland signature in various sizes. I used to work in a restaurant (not as a career) and I cook on the stove every day.  BROWNING- Five stars - This pan is the best and it shines here

 There is a small scratch on the surface but its steel and will buff out after seasoning, not an issue.  If you have a ceramic glass top, please be aware of this. Other than that, the quality seemed very good.  If you're using a gas range, you probably wouldn't notice this. I returned this skillet for another "high quality French skillet" and this issue didn't exist with the second one

 It inserted almost to the the center of the pan if inserted 180 degrees (directly opposite of the handle). So, the heavy handle was slightly lifting one side of the skillet off the surface. If you have a ceramic glass top, please be aware of this. Other than that, the quality seemed very good
