Like cast iron, carbon steel pans can be moved from stovetop to oven and back again. The Matfer Bourgeat Black Steel is a good example. It heats evenly, browns foods (like scallops) well, earning an Excellent rating on that test, and is easy to clean once you’re all done. Like the other carbon steel pans we tested, this one earns a Very Good rating for cleaning. But to keep it that way you have to reseason it from time to time.

Not worth the effort

I do love the pan. Great size, nice heft, cooks nicely. BUT, I used the pan once following directions, washed with no soap--hot water, heat-dry & oil. Went to use again and the outside of the pan has a rust spot by a handle

I have been watching Chef Billy Parisi recently and he raves about this carbon steel pan. I haven't used it yet but I did get it seasoned correctly and it is already to go. Lighter than cast iron, made in France!

This pan rocks!

 And, not only is it perfect for paella, it’s great for roasting vegetables, meat, and fish. The pan has a slightly textured bottom that keeps food from becoming saturated with oil, which creates that nice, crispy shell. The pan is heavy and distributes the heat so there are no hot spots so no burned food.  The pan comes two sizes: a big one that holds enough to feed a professional football team, and a smaller one for those of us who cook for a family and an occasional group of friends

Produces Perfect Paella!

I bought this pan after doing some research and also considering it was recommended by America’s Test Kitchen. Long story short, this is one of the best pans I have ever purchased and would definitely recommend it (and not just for paella). If seasoned properly it is no stick and will cook anything. So, I have read some posts about how to properly clean and season the pan

Perfect pan not just for paella!

This pan is awesome, versatile and used often in my kitchen. I have some of the M’Steel carbon steel frying pans, so I was already familiar with the seasoning and care routine of owning a carbon steel pan. This product is listed as a paella pan, but I have yet to make paella in it. I have made bacon, eggs for a crowd, roasted leg of lamb, homemade pita bread, frozen potatoes, fish sticks and more

 There is a very small manufacturing defect on the rim of the pan which I didn’t notice until I had already begun the seasoning process. This doesn’t affect the utility or performance of the pan so I am choosing to live with it. The seasoning process took several attempts before it was starting to be nonstick, but now that we’re on our way I am quite pleased.

 Nothing happened with the first batch, but in the last 5 minutes of the second batch, the pan started to brown and developed a beautiful patina. I bought the biggest size available, and it made amazing Paella for 12. There were no leftovers.

 I will say that it too a significant amount of elbow grease to get the factory sealant off before the first use. I mean SCRUBBING with a brillo pad for about 2 hours. But I followed the directions for seasoning and it worked fantastically well. You have to saute oil, salt (a lot!) and potato skins for 15 minutes, then repeat

I chose this one because it was given the highest rating by Cooks Illustrated (the smaller version, actually) - they are the Consumers Reports for the cooking world.
