At that price point though, it's pretty good, but it's definitely not going to be the sexiest knife in your kit. I Have a friend that cooks with this knife so I've used it before. It's relatively well balanced, but the handle is very thin so I find that I have to choke up on the handle quite a lot, which isn't the most comfortable, especially for long cuttings sessions

Mercer Renaissance Chef Knife - WORTH IT?!

 Sharpness was pretty good and a few minutes worth of stropping time took care of that.  I'm torn between keeping and returning this knife..

.. The handle is too short, too small in profile, and the feel is off. It should be another 3/8th of an inch or so to feel matched to length with a bit more girth

 Not only is the handle too short, but the blade profile looks weird, its height too short at the bolster, and the blade is surprisingly too thin and flexible. Should have left it full height at the bolster as the 3.5" starts out, and then carefully and properly taper the blade profile correctly. You can see what I am describing looking at the photo

Good, but could be a LOT better...  Especially from Mercer. Dissapointed.

 I will say that I think that that angle needs to be increased to to a thicker angle probably closer to 17 17 to 18 degrees per side, which is roughly where this one is 17 or so just to keep it from rolling. because uh, the steel is actually the same steel as Wusthofs and Victor Knox is used. It actually says it right here. The X50 Cr Mov 15 steel

 It's rounded in all the places. It really teaches you that. Great rocking motion, Very forgiving steel that responds well to honing and as easy to sharpen on a stone. Uh good good, easy to work with, Balance? It's it's a it's just a really great knife

 It does a good job, just make sure you come all the way through on that heel. otherwise you'll get the slinky accordion style of stuff so you can tap chop with it. Just when you hit the front, make sure you come down to the back so that looks like this. so forget about my inconsistencies

 here. You can see that it it's decently thick in terms of sharpening up until that very end. I think they give you a decent amount of room to to sharpen this and have it go this way before it gets too thick back here. So they did a pretty good job with this part of the grind

The Imarku chef's knife is a decent all arounder that is a good introduction to Gyutou style knives. With less rocker than European-style chef's knives and typically thinner blades, it can take some adjusting to get used to working with Gyutou knives. This blade was a decent performer across the board but didn't truly excel at any one thing. As expected from this style of knife, it took to the more delicate knife work like julienning and chiffonades handily. Equipped with a beautiful wooden handle, this was one aesthetic knife for the price point. 
This knife's most significant shortcomings were apparent while trying to break down big and tough root vegetables and squashes. The knife struggled to push through sweet potatoes and butternut squashes. Once these veggies were broken down into smaller pieces, the blade had no trouble moving quickly to chop or dice them but getting to the point was a process. All in all, this is a well-rounded knife that is ideal for someone wanting to try a Gyutou style knife without breaking the bank.

How I Feel About My New Imarku Chef Knife - Review

 Since we’ve purchased this knife, we haven’t touched our knife block. It’s sharp, it stays clean, and the edges haven’t chipped or cracked yet. He uses it probably every single day and it’s held up with no problems. It’s constructed well; the handle doesn’t wiggle or come out of place

Make sure you store it properly! We keep it in its own slot in our cutlery drawer with the foam from the original packaging at the bottom of the drawer to keep it from scraping on anything. We always hand wash it and dry it well before putting it away. Treat it well and it’ll last!

I decided to try this knife as it was on sale and had good reviews. I was replacing an old chef's knife. The knife is nicely made, and has a very sharp blade.

My knuckles hit the board if the handle was positioned over the board at all. When I moved the knife handle off the board, it was still uncomfortable to use, as I had to tilt my wrist in an awkward position to cut with the end of the knife closest to the handle.

The problem is the shape and set of the handle. Instead of extending straight out in back of the blade, the handle slopes downward as it goes back. That slope, combined with a relatively thick handle means that you cannot cut anything with the handle of the knife over the cutting board. (Maybe I have bad technique, but I have used my other knife this way for years

Watch your knuckles!

 It most definitely gets the job done smoothly. If you're looking for something that's not crazy expensive but not dirt cheap material, I highly recommend it.
